Copper River salmon notes the start of the wild salmon season. “Barb Knivila – Copper River signals the start of the fresh wild salmon season. Keep your eyes peeled for wild king and wild sockeye out of Bristol Bay and other west coast fisheries!” Copper River salmon is just such a succulent type of salmon. Sweet. Not at all “fishy”. Very red meat. Great for steaming …. especially packet steaming. Add a little lime, lemon, French tarragon, sea salt and fresh Tellicherry pepper and you’ve got an awesome dinner. Better yet, let the fish marinate in this citrus over night in the refrigerator. Then add a little riesling wine for the fish to steam in. Yummers!

In other words, hook up a trailer to a vehicle and take the produce to different neighborhoods. New idea? In the 21st Century, maybe, but I can remember the farmers coming to our neighborhood – in Delaware – and my Mother buying fresh produce that way in season. Look at what they are doing. If you need to enlarge the photos to see them or to print them, Left-Click the photo. From the BFM website, “Spring produce galore! Look for strawberries, asparagus, lettuces, mustard greens, radishes, rhubarb, micro-greens and a whole lot of love. Plus, the debut of the BFM Mobile Market on Saturday, May 23rd!”

You can find more by clicking here Ruth’s Chris Steak House, Boise. Make reservations online or reserve their Party Room. They have a full and extensive Menu that can be viewed online and get an idea of what they offer. Not ready for dinner? Try their Happy Hour Menu for lighter offerings. “… Our Sizzle, Swizzle and Swirl Happy Hour features $8 food specials and premium cocktails.” You will find the menu items either equal to or greater than Chandler’s Steak House or to the Cottonwood Grille. Ruth’s Chris Steak House, Boise is definitely a 5-Star restaurant. Here is what we had. Two of us ate for $123.00 and it was worth every bite. Definitely a Special Occasion restaurant; Great for “Date Night”.. Enjoy!

Petite Filet. "USDA Prime served sizzling on a 500° plate - every bite is as delicious as the first." This was delicious! Loved the way the sides came in their own bowls. The Creamed Spinach was super good wsith a touch of nutmeg. The Mushrooms accompanied the steak very well. Robin had Garlic Mashed Potatoes.

Here are two meals that we have had this week. Very vegetable based, but not entirely vegetarian. I think both were superb and well worth repeating. What do you think?

Housemade Hollandaise Sauce

The portabella mushroom takes the place of the traditional toasted English muffin and we also added steamed spinach, to give the dish that Florentine look. This was really delicious. Then we had this wonderful soup.

For a thickener we used steamed cauliflower florets that were emulsified in chicken or vegetable bouillon. The fenugreek gave the soup and very East Indian aroma and flavor and the turmeric gave it a wonderful soft, spiciness. Actually, pretty good meals today. Found out too, that BSU is a 2.5 point underdog in the Hawaii Bowl on December 24 (6:00pm Mountain Time on ESPN) when they play Oregon State. We’ll see! Anyway, here’s what we had for breakfast and then dinner. Enjoy! And, I just thought of this, here are the products for these two meals that were local: Eggs, spinach, sourdough bread, jam, bacon, chicken, potatoes and the wine for dinner was a 2010 Cold Springs L’attraction White Table Wine, a Gold Medal winner in the 2013 Idaho Wine Competition.

Such a good wine dinner tonight. Somewhat different. A good change. Comparing Old World wines with New World wines. Just to let everyone know, the monthly coupons are now on sale at the Buzz. These are prepaid coupons so you pay for 5 dinners and get one free. Robin and I always get some. And, Cristi told us all that she must raise the price starting in January. It will go from $15 a plate, to $20 a plate. Wine amounts and dinner courses will be the same. And in January? Asian food and wines that go with that style of cooking and food. Who is the Chef?
