Saint Jacques au Saffron (Scallops with saffron)

We had an awesome experience this past week and that was we had an awesome dinner at Bacquet’s Restaurant in Eagle, Idaho.We have been there before and it was superior then. It still is. We had more than the scallops pictured above, much more. But these, at least in my opinion, stood out. The food and the restaurant is easily deserves a 5-Star rating. Service was outstanding as was the food. If you  are in the Boise area, Google the restaurant to find it and make reservations! (1117 E Winding Creek Dr, Eagle, ID 83616  (208) 377-6238) I asked for permission to use the recipe, and Michele Holly, Manager, was happy to give me permission to use the recipe. So here is a link to the recipe. https://www.rockinrs.com/St-Jacques-Scallops.pdf  This recipe is not for the faint-of-heart home cook, but it is doable. Just take your time and follow the recipe.

The recipe calls for U10 scallops, so here is an explanation of just what that means. U10 size: Jumbo scallops are a dry scallop. All cold water ocean scallops have a succulent sweet texture and are 100% white meat. What does u-10 mean? It means that there are less than 10 scallops in a pound, and they are perfect for sauteing and broiling! These wild, jumbo sized Sea Scallops are harvested off the coast of Chatham, Massachusetts. Their size ensures a tender, succulent texture with loads of sweetness and just enough briny salinity to be both refreshing and satiating.

Oh yes. And some awesome new wines! Chef Storm and his friend Chef John Mercer (see This Post) did a super, awesome job preparing these goodies. This was a special dinner put on by these two very talented Chefs. It will not be available at all times. Their Prime Rib, though, is just as good. Look at what we enjoyed today. This was a fantastic event and I do hope we are able to enjoy it next year. It was hosted by the Idaho Truffle Association and you can get more information about Idaho truffles by clicking Here. It’s been a while since we were here last. But just to let you know, this is still a superb, 5-Star bistro. Superb food. Superb wines. Superb staff. Our many thanks to Chef Storm and Sous Chef Megan and their staff for a great dinner. Stephanie and her servers were awesome and service and friendliness was super. Chef Storm made a post on FaceBook that shows you how dedicated Storm and Stephanie are. “It’s always exciting when you get a surprise visit from the health inspector. It’s even more exciting when you get 100% and they say they’re going to come back and have dinner with their spouse!!!”
And if you are planning to go to the Parma Ridge Winery and Bistro tomorrow for Easter, and you do not have reservations, I was told yesterday that they are sold out! But if you are going to visit them – and I sincerely hope you will – here is some information that you will need: “We are open Friday,12-9 p.m., Saturday 12-5 p.m. and Sunday 11 a.m. – 5 p.m. with wine tasting and our regular menu all weekend long. We did have a good visit to Deja Brew – Laugh A Latte in Meridian on March 23, 2018 at 112 East Idaho Avenue, Meridian, ID 83642. Phone – (208) 957-6442. Hours – Mon: 6:30AM-8:00PM, Tue: 6:30AM-8:00PM, Wed: 6:30AM-8:00PM, Thu: 6:30AM-9:00PM, Fri: 6:30AM-9:00PM, Sat: 6:30AM-9:00PM, Sun: 6:30AM-3:00PM. Good ambiance with plenty of open seating. It can be a little noisy, though; They need to turn the music back somewhat. You must order your food at the counter, but they will generally bring it to your table. They do have a good Breakfast/Lunch Menu with many varieties of coffee and tea. Their Dinner/Wine/Beer Menu, with a good selection of beer and wine. We will return to this bistro in Meridian. It is definitely a 4-Star restaurant/bistro. Here are some photos. Enjoy!

Virginia Dare Pinot Noir. A really good wine that goes well with my breakfast of Eggs Benedict and Robin’s Cobb Salad. Surprising. And yes, it is made in Virginia with Russian River (CA) grapes.

I had Eggs Benedict. The potatoes were good. Different. Just a little salty.

They are very busy, so if you have a crowd of more than four, it’s best to call ahead. The patio is open and a large part of it is covered.The patio is open! Wonderful sunny and warm day.The menu may also be somewhat different than the Saturday or Sunday Brunch menus. Check the link above for the available menus or look at This Weekend at Parma Ridge to see the menu varieties for at least one of the weekends. Whenever you go, and I highly suggest this 5-Star winery and restaurant, you will be treated to some awesome wines and definitely some awesome food as prepared by Chef Storm and Sous Chef Megan. The Staff in the restaurant has grown! They have added Sous Chef Megan and service Staff. Our server Tammy was excellent. Thank-You! Here is some of the Happy Hour food that was at our table. We did not eat all of this as Fred and Dottie Christensen joined us. Good to see friends there. Enjoy! We did.

We did have wine. A wonderful blend of Cabernet Sauvignon and Merlot that paired wonderfully with asparagus. (Robin tried the newest rage of vanilla ice cream in red wine. She tried it with this blend. Wasn’t bad! If you like Guinness and Ice Cream you will probably like this.) And then we had some –

2015 Chardonnay, $16.50
Fargo Farms – Snake River Valley
Everything you would expect from the terroir of the area, this dry Chardonnay is made with Chardonnay grapes from Fargo Farms and a touch of Gewürztraminer from Parma Ridge Vineyards. This wine has been created to preserve the intense flavors and aromas without any manipulation. Hints of grapefruit and rosemary compliment the tart finish to be enjoyed any time of the year.

​2015 Dry Riesling, $16.50
Fargo Farms – Snake River Valley
Made with 100% Riesling, this dry wine features melon with citrus notes and touches of honey crisp apple. This smooth wine is a perfect complement creamy pasta and sharp cheeses. This also pared very well with asparagus. Hard to find a wine that pares well with asparagus or artichoke and maybe avocado.

Such a great evening at the winery and restaurant. Definitely 5-Stars!!!

14Mar2015_1_Modern-Hotel_SignThe Modern Motel Restaurant, 1314 West Grove Street, Boise, ID 83702, never ceases to amaze me with the quality of food that they present and serve. We have been there several times and I have never had a meal I did not like. Today was no exception. Their Brunch Menu offers at least 1 special. It changes. See if they have the Cauliflower Grits or the Squash Bread with Coffee Butter. If they do, get some! Here is their Dinner Menu, which is also subject to change. Here’s what we had. It’s really great to see that they use local products whenever possible.

17Dec2015_1_Brickyard_SignIn Boise, one of the better burgers! Almost as good as Storm’s Burger from the Parma Ridge Winery Bistro in Parma, ID. The BrickYard, Boise offers a very attractive dining area and a good BrickYard Menu along with Idaho, and other, wines and spirits. Children are welcome! I need to say right now, our Waiter, Brandon, was superb. Friendly, polite, and liked to engage in good conversation and could answer all of our questions. He even made my lunch a little different and not on the menu. Well worth a trip and be aware, one of the best burgers in Boise! We will go back. “… Brickyard Music – This weekend scheduled to play Friday December 4th, & Saturday December 5th featuring dueling pianos with Robert Morrow, Danny Beal and on the drums (& Vocals), Adam Troutman, playing all requests starting at 10pm. For an extended music calendar and ticket information on upcoming events, follow us on Facebook! The BrickYard strives to showcase local products when available.” Definitely a 4+-Star restaurant. Chihuly glass art on the wall! “… Dale Chihuly (born September 20, 1941), is an American glass sculptor and entrepreneur. Hand formed half pound ground chuck patty infused with smoked bacon, char-grilled and crowned with sharp cheddar. Dressed out with crispy onions, butter leaf lettuce, sliced fresh tomato and mayonnaise on a fresh baked bun served with hand cut steak fries

I had them hold the bun and they did that. It was good to see that they would alter their menu to suit the client. I ate about 1 cup of the fries and Robin ate the rest.
