It really was a good dinner. The breadcrumbs were awesome and added so much to the dish. And then we made a gravy from the “grameals” in the bottom of the pan where I cooked the chicken. Add a little Marsala, some finely chopped green onion and some chicken bullion with corn starch, and you have a great gravy. It was a yum dinner.

21Mar2013_1j_Kabob-House_Front-DoorWhat a great evening of music, dance and food! And such a great restaurant for the celebration – Kabob House, located at Maple Grove and Emerald in Boise. So what is “Nowruz”? To quote from a flyer they gave everyone, “Nowruz means “New Day” in the Persian language (Farsi), and is widely referred to as the Persian New Year. It also corresponds to the first day of spring and the beginning of the year in the Persian calendar … Nowruz is celebrated on the day of the astronomical Northward Equinox, which usually occurs on March 21 or the the previous following day, depending on where it is observed”. “…Originally being a Zoroastrian festival, and the holiest of them all, Nowruz is believed to have been invented by Zoroaster himself, although there is no clear date of origin. Since the Achaemenid era the official year has begun with the New Day when the Sun leaves the zodiac of Pisces and enters the zodiacal sign of Aries, signifying the Spring Equinox. Nowruz is also a holy day for Sufis, Bektashis,Ismailis, Alawites, Alevis, Babis and adherents of the Bahá’í Faith.” [Wikipedia] Interesting. Did you know that in 1752 England and it’s Colonies (the American Colonies) changed the new year from March 25 – the English calendar – to January 1 – the “New Style” calendar? Robin had a Shir-Berenj, a Persian rice pudding made with rose water.

So there you have our celebratory New Year Nowruz dinner party. Fun and delicious. Great to see Soraya, Michael Moss and his wife and Barbara and Patrick Myhre. The food was super and the price was nominal. You see everything that we had, except for the chicken kabob which was Patrick’s, and we paid about $20.00 per person. I think that was a very good price. We will return to Kabob House. And from their FaceBook page, “Enjoy cuisine representing the culinary cultures surrounding the legendary Khyber Pass, with an extensive menu of Persian, Afghan, Indian, and Central Asian dishes. Italian Wine Dinner and some scrumptious entrees along with the wines. The wine pictured here, 2010 Montepulciano Cantina was but one of the selections for the event. This wine went very well with the light spice of the Italian Sausage Soup. It countered, without over powering, the soup. Great paring! I score this an [18] out of [20]. And Paul presented one awesome Merlot before the party started. A 2010 Luna Merlot from the North Coast. 14.1% alcohol. [19] $16.00. I went back for more! Here are the other entrees and the wines. Robin had been asking – in her soft and gentle way – for chicken wings. And believe it or not, I don’t know where to find any in Boise where one can purchase a “bucket” of them. I know there has to be a place, I just don’t know where. I can see another assignment coming up. Anyway, I decide to make some. And here is the Recipe that I came up with. A perfectly delightful evening at Maggie’s Place on Sunday night. Chef Maggie did an awesome job with the Chicken and Dumplings, again! And as always, she served up the perfect chalice of Stella Artois. And Robin chipped in with a great Huckleberry Pie. I feel so lucky to have two super-duper Chefs. A good German Sekt wine to go with the chicken. Not too sweet and a little frizant – bubbly.

A super great and delicious salad. Who would have thought that avocado and sweet red onion would go so well together. (Go full screen on this one. The colors are so delicious.)

And the star of the show! Maggie’s Chicken and Dumplings. Yum-O!!!!

Huckleberry Pie fresh out of the oven. Another gastronomic delight! It is not often that one can get huckleberries.

Bordeaux Night At Le Café de Paris

Another great wine dinner at Le Café de Paris in Boise. It’s been a while since we have been to one of their dinners. This was really good. The wines were overall an exceptional choise for paring with the dinner. And the dinner, ala carte, was super. What we liked was the wider range of selections from the special menu. 4 appetizers to choose from, 3 salads, 3 soups and 8 entrees. The 8 entrees included a special for the night of Rack of Lamb. Le Café de Paris is known for their bakery, Gaston’s Bakery. Yummy breads and other treats.

Here are some of the wines we had. Great with the Lamb and the Chicken entrees. Some volitility noticed and green olive in the 2006. Surprisingly, the asparagus went very well with the 2006.

Good with the oysters and the soup. The soup brings out the herbalness of the wine.

Chicken Kiev for Rosh Hashanah

Ready for the oven.

This was really a good dinner. Easy to make and only takes about45 minutes including prep work. Give it a try.

Chicken Kiev
Spinach Salad
fresh tomato, carrot strips, basil, fresh lemon cucumbers, lite lime dressing

Here is the recipe. Enjoy!

Chicken Kiev
(Rosh Hashanah)

Serves: 2

Ingredients:
2 boneless and skinless Chicken Breasts
1 Lemon

Herb Butter:
½ c unsalted Butter at room temp
1 T fresh Chives, chopped
1 lg clove Garlic
¼ t Sea Salt
¼ t fresh ground Pepper

Chicken Dredge:
Toothpicks
Matzoh flour, or panko or breadcrumbs
1 lg Egg
1 T Water
1 T fresh Lemon Thyme
¼ t Sea Salt
¼ fresh ground Pepper
Olive Oil

Directions:
Pre heat oven to 425°F

Herb Butter: Can be made ahead
Combine the soft butter with the chives, garlic, salt and pepper. Cover with clear wrap and roll into a log. Place in refrigerator for more than 30 minutes to stiffen.

Chicken:
Pour ¼ cup olive oil into a baking dish to coat.

Pound the chicken breast to ¼ inch. Place several small pats of butter (3) in the center of the pounded breast. Squeeze fresh lemon juice on the pounded breasts. Roll and stabilize with the toothpicks.

Coat the chicken with flour. Then dip into the beaten egg that has 1 T of water added.

Combine the lemon thyme, salt and pepper to the Matzoh. Mix to combine. Dip the chicken into the Matzoh and coat. Place seam side up into the baking dish.

Bake at 425°F for 15 minutes. Reduce the heat to 375°F for 10 minutes. Baste several times with the drippings.
