25Nov2013_1a_Happy-Fish_Foodie-Meetup_Entrance-CarpetThe Idaho Foodie Meet-Up group met at the Happy Fish Sushi and Martini Bar in downtown Boise today for lunch. Not bad, but my benchmarks are still Sushi Joy and Shige. That’s not to say that we would not return here. No way. Probably rated at 4 1/4 – Stars out of 5. It’s just not “as good” as our benchmarks. But that’s very subjective and I realize that. Here is what we had. Robin, myself and Bernadette were the only ones there. The ladies each had a bowl of Miso. It smelled good. You missed a good adventure. Enjoy!

DownTownBoise-PostureSuch a great idea!! Plus, as hungry consumers, we get to try some different restaurants in Boise for a cut-rate cost. There are about nineteen different restaurants that are participating in the program this year. My only request is, if a specific restaurant has “special hours” for their menus, please let the public know. For instance, if you advertise a lunch menu, and if there is a time limit on the lunch menu, then please state that the lunch menu is only good until 2:00pm.

We went to Angell’s Bar and Grill-Renato this afternoon and had a wonderful late lunch. Out of 5-Stars, we rated our visit a good, solid 4-Stars. We had a very pleasant conversation with the owners Russ and Marika Dawe and Chef Will. Thank you for taking time from your busy schedules to chat with us. Great to see that they serve Idaho wines, Cold Springs Winery which we had, and Boise bakery, Acme Bakeshop Breads. Superb job, Chef Will! Here are some photos from our visit.

Hake-ProsciuttoThat’s right – Hake. But what is it. I actually thought it was Oriental in nature. Wrong! Hake is a white fish that lives 200 – 300 meters below the surface of most oceans found here on Earth. Pacific Ocean, both the northern and southern oceans, Atlantic Ocean, both the northern and southern oceans, the Mediterrean and Black Seas. Off the coast of the USA, Argentina, Chile and South Africa to name a few. According to the Boston Globe in an article Sunday Super – Hake Goes From Trash Fish to Treasure, Hake has become a very popular seafood. In fact, it has been over-fished off the coast of Argentina. In the October 13, 2010 article, the Globe states that,

Hake, once called “trash fish,” because few people wanted it, may be the last bargain in the seafood case. “Yesterday’s trash fish may be tomorrow’s food fish,” says Mark Szymanski, assistant biologist at the Massachusetts Division of Marine Fisheries. Carl Fantasia of New Deal Fish Market in East Cambridge sees a lot of hake when he goes to buy fish at the wholesale houses. “I recommend it quite often to people who are looking for a white, flaky alternative to cod or halibut,” says Fantasia. Gavin Egbert, seafood coordinator for the North Atlantic Region for Whole Foods Markets, says that hake has not been ranked by the Blue Ocean Institute, a scientific organization that collects data. No one is really certain whether there are sufficient stocks of this locally caught, sweet, white fish so that you can buy it guilt free.

I did, but it must rest a while before eating. She waited long enough. So I made her a small green salad with yellow tomato and the crab dip.


Crab Dip – East Coast Style

Cooking Times
Preparation Time:
20 minutes
Total Time: 40 minutes
Comments: The Blue Crab can be bought from Charleston Seafood Company, http://www.charlestonseafood.com or use Phillips canned Blue Crab.
Author Notes: This recipe comes from Bob’s sister-in-law, Marge Young.

Ingredients:
1 lbs Crab Meat (Blue Crab)
1 lg Package (8oz) Cream Cheese, softened (No fat works fine)
½ cup Mayonaise …. more or less to taste
1 Tbs Horseradish …. more or less to taste (We like more. Like double the amount.)
½ Lemon, juiced

Procedure:
1. Beat the last four ingredients together …. fold in the crab meat. Hide the dip in the refrigerator until ready to use. (This is the hardest part.) Serve with crackers or small breads.

2. As you can see, this is not an exact science and the tasting part is important and the most fun.

One can really get hooked on this dip. It is that good!! Cheers and enjoy! Thanks Marge for sharing this so many years ago.

19July2013_1_Captains-Shack_Tilapia_PlatedTilapia. A very mild white fish must be cooked slowly and completely. But not to the point of drying out. Take your time. The tilapia here was cooked about 3 minutes on each side over moderate heat. The fish was cooked in a butter/olive oil/lemon bath. Then the liquid was finished off with whole milk – I didn’t have any cream – a small amount of corn starch and lime zest. Whisk constantly until thickened – about 2 minutes. pour over the fish as pictured here.
The asparagus is steamed in a garlic butter mixture over low heat. Serve on the plate with the tilapia. A glass, or two, of 2011 Canoe Ridge The Expedition Chardonnay goes very well with this dinner. Cheers and enjoy!

It may have been National  Corn Fritter Day, but we decided on a family favorite - Corn Pie. Here was our menu: Corn Pie Scallop Cakes Sliced Red, Yellow and Zebra Tomatoes with Basil and Oregano Shreds 2009 Sawtooth Petite Sirah This was a YUM dinner! Comfort food.

15July2013_1_Captains-Shack_Scallop-Cakes-PlatedRobin asked the other night for crab cakes, plus she found a recipe for Maryland Crab Cakes on FB. We did not have any Blue crab in the house, although it is available at Costco. So I asked if it would be OK to try the cakes with bay scallops. The result is what you see here in this photo. They were very good and a nice substitution for crab cakes. Basically the same recipe, but altered in places. Click Here for the recipe in PDF format. Serve these with a nice green salad with fresh tomatoes, homemade tartar sauce and a 2009 Sawtooth Winery Petite Sirah, the wine goes quite well with the scallop cakes. I will also post it in the recipe file on this blog. Cheers and we hope you enjoy these.
The tartar sauce that we make is pretty basic. Here is the recipe.

Homemade Tartar Sauce

Yield: abt 1 1/2 cups
1 c Mayonnaise
3 T Pickle Relish
1/2 c Chili Sauce
2 T Kosher Horseradish
1/4 t Sriracha Chili Sauce, use cautiously … It is hot!!
Juice of 1/2 Lemon

Mix all together and refrigerate for 15 minutes. Serve with these Scallop Cakes, Crab Cakes or most any seafood. Enjoy.
