The wine went very well with dinner. This is still a superb wine whose time has come. Time to drink it. And then we can open our 2005 supply of this fantastic chardonnay. Hope it goes as well with this great seafood combination. The components for the salad were all from the Boise Farmers Market as was the Acme Bake Shop sourdough bread. We always eat so well at The Captain’s Shack!

18Aprikl2014_1_Fresh-Off-the-Hook_Menu-CoverOnce agai, we went to Fresh Off the Hook in Boise and were treated to another awesome dinner. It is, without a doubt, the Best In Boise for seafood. Yes. A 5-Star seafood restaurant. Their Menu is full of surprises and delicious. I want to try one of everything. For instance, their fried foods are more like the tempura at Sushi Joy, it is light and not grease soaked. The fried foods taste like they are supposed to. Shrimp taste like shrimp. Cod tastes like cod. Not over powered with batter. It is good! In short, if you are in Boise, you must try to go to Fresh Off the Hook. Cheers and enjoy these photos.

We just had to come up with something for dinner and we were in “one of those quandaries”. Nothing really sounded good. Then I looked in the freezer and saw some bay scallops – the little ones – and thought, “Maybe a nice Scallop Alfredo.” I passed it by Robin and she said yes. So here is our dinner. And here too is our recipe for Alfredo Sauce. It’s not for the faint of heart – one must be quite heart healthy. (In her book “Easy Tasty Italian”, Laura Santtini says that an Alfredo Sauce is “.. the king of the fresh pasta sauces … and is described as a ‘heart attack on a plate'”) But also know that an Alfredo Sauce is one of the Classic Italian sauces that was designed to complement fettuccini pasta. Enjoy the sauce!

Oh, and yes, don’t forget the Boise Farmers Market at 10th and Grove starts tomorrow, Saturday April 5.
It runs from 9:00am – 1:00pm.

26Dec2013_1_Captains-Shack_Recipe-HoldersLet’s see. We were in Florida for 14 days. With luck, that’s 28 meals plus. Nope, not going to post every meal, just some of the better ones. All of these restaurants rate at least 4-Stars out of 5-Stars. I am not going to list these restaurants in any particular order, i.e., worst to best. They all rate “Best”. And most of these will have links in the sidebar if available.

We were only allowed into one kitchen in all of the restaurant and that was in Bern’s Steakhouse in Tampa. So the photo here is not from any kitchen in Florida … Actually it is our kitchen in Boise. Great way to hold your recipe in a skirt hanger, if you can get away with it. So read on and enjoy these epicurean delights. Cheers! It looks like it is a hit with the local folks as well as tourists. There is a permanent link to the cafe in the sidebar. Good food. Enjoyable. Loved the Chef Larry’s Fresh Fruit Vinaigrette on the House Mixed Greens salad. All of our plates came with it.

Our next restaurant that we enjoyed was in Winter Park, Florida, was The Ravenous Pig.

And then when we were in West Palm Beach, Lani took us to Guanabanas – Island Restaurant and Bar . Really good food with an island flair, both the design layout of the restaurant and the food.

This is well worth the trip if you are in the area. Good food and an exciting and different venue.

It may have been National  Corn Fritter Day, but we decided on a family favorite - Corn Pie. Here was our menu: Corn Pie Scallop Cakes Sliced Red, Yellow and Zebra Tomatoes with Basil and Oregano Shreds 2009 Sawtooth Petite Sirah This was a YUM dinner! Comfort food.

15July2013_1_Captains-Shack_Scallop-Cakes-PlatedRobin asked the other night for crab cakes, plus she found a recipe for Maryland Crab Cakes on FB. We did not have any Blue crab in the house, although it is available at Costco. So I asked if it would be OK to try the cakes with bay scallops. The result is what you see here in this photo. They were very good and a nice substitution for crab cakes. Basically the same recipe, but altered in places. Click Here for the recipe in PDF format. Serve these with a nice green salad with fresh tomatoes, homemade tartar sauce and a 2009 Sawtooth Winery Petite Sirah, the wine goes quite well with the scallop cakes. I will also post it in the recipe file on this blog. Cheers and we hope you enjoy these.
The tartar sauce that we make is pretty basic. Here is the recipe.

Homemade Tartar Sauce

Yield: abt 1 1/2 cups
1 c Mayonnaise
3 T Pickle Relish
1/2 c Chili Sauce
2 T Kosher Horseradish
1/4 t Sriracha Chili Sauce, use cautiously … It is hot!!
Juice of 1/2 Lemon

Mix all together and refrigerate for 15 minutes. Serve with these Scallop Cakes, Crab Cakes or most any seafood. Enjoy.

Scallops Sauteed in Garlic Butter and Lemon Juice
with
Angel Hair Pasta, Gremolata and Cilantro Topping

Spring Green Salad and Kumquat Dressing

Question now is: What is a Gremolata? Gremolata, an Italian condiment, is made from finely minced parsley, garlic and lemon zest. Traditionally served with veal, it is also an excellent accompaniment for fish and seafood dishes.
Ingredients:
Zest of two large lemons
2 lg or 4 sm cloves Garlic, crushed
4 T finely chopped Italian Parsley
2 t Olive Oil
½ t Salt
¼ ground Black Pepper
Preparation:
Thoroughly combine all in ingredients in a small bowl, cover with plastic, and refrigerate for an hour.

Try it sometime. Easy to make and quite good! Cheers.
