26April2014_1_Beef-Short-Ribs_Homestead-Ribs-ThawingThis was an awesome dinner! Beef Short Ribs from Ed Wilsey and Homestead Natural Foods. It is really nice to see that most of these products are available, and were bought at, The Boise Farmers Market. If you live in, or around Boise, this is the “place to be” on Saturday mornings. And I sincerely urge you, whether or not you live in Boise, to visit and support your local farmers and your local farmer’s markets. In this meal, we used products from Homestead Natural Foods (beef short ribs), River View Farms (wild garlic and carrots), Meadowlark Farms (eggs) and Purple Sage Farms (rosemary and salad greens). From our own garden, we used fresh thyme, Miner’s lettuce and Mexican oregano. An Indian Creek Winery wine was served with dinner and a 2002 Parma Ridge Vineyards Milange was used in the recipe. 18Aprikl2014_1_Fresh-Off-the-Hook_Menu-CoverOnce agai, we went to Fresh Off the Hook in Boise and were treated to another awesome dinner. It is, without a doubt, the Best In Boise for seafood. Yes. A 5-Star seafood restaurant. Their Menu is full of surprises and delicious. I want to try one of everything. For instance, their fried foods are more like the tempura at Sushi Joy, it is light and not grease soaked. The fried foods taste like they are supposed to. Shrimp taste like shrimp. Cod tastes like cod. Not over powered with batter. It is good! In short, if you are in Boise, you must try to go to Fresh Off the Hook. Cheers and enjoy these photos.

The other evening when we were at a Ridge Winery tasting, they suggested to go with their Estate Cabernet Sauvignon to have a Ridge Winery Lamb Meatloaf. We did not have any of the cab, but we do have some 2003 Ridge Winery Lytton East Zinfandel and it is an awesome wine! We still have 5 bottles in our storage. We made the meatloaf and it too is awesome. Look at these photos I took of the dinner and the the Sunday morning breakfast consisting of a Shrimp and Fresh Asparagus Omelet. Yummers!

And just as a note: The lamb is from the Felzien Family Farm where we get all of our fresh lamb. The eggs are from Meadowlark Farms, where we get all of our eggs. The asparagus and garlic are from the River View Gardens. The sourdough bread is from our favorite bakery Acme Bake Shop. The carrots were from Rice Family Farms. We really do try to keep our food supply local and we do Buy Idaho! Cheers.

You might say that this was the “First of the Season” grilling, although I have grilled this past winter. This was a great change for dinner for one night. Loved the Beef Rib Steak from Homestead Farms. Medium rare, and tender. And of the two wines we had, we much prefered the Indian Creek Cabernet over the Bitner Vineyards Cab. The Indian Creek had a lot of fruit forward and went extremely well with the grilled beef. The Bitner Cab is probably on the “downhill side” of perfection.
The beef was from the Farmers Market, the sourdough was from the Farmers Market and the lettuce was from the Farmers Market. The potatoes were Idaho potatoes and the wines were from the Snake River AVA, Idaho. Eat Local! Enjoy!

We just had to come up with something for dinner and we were in “one of those quandaries”. Nothing really sounded good. Then I looked in the freezer and saw some bay scallops – the little ones – and thought, “Maybe a nice Scallop Alfredo.” I passed it by Robin and she said yes. So here is our dinner. And here too is our recipe for Alfredo Sauce. It’s not for the faint of heart – one must be quite heart healthy. (In her book “Easy Tasty Italian”, Laura Santtini says that an Alfredo Sauce is “.. the king of the fresh pasta sauces … and is described as a ‘heart attack on a plate'”) But also know that an Alfredo Sauce is one of the Classic Italian sauces that was designed to complement fettuccini pasta. Enjoy the sauce!

Oh, and yes, don’t forget the Boise Farmers Market at 10th and Grove starts tomorrow, Saturday April 5.
It runs from 9:00am – 1:00pm.

I knew Chris had a kitchen talent. He made the main course of Chicken Pasta and it was very good. I am sorry the Maddy and Sophia missed it. But Chris did make plate for Maddy.
