19July2014_1a_Boise-Farmers-Market_Acme-Bake-ShopWe were not in town last week, so I missed the market. But, I made up for it today. Wonderful green and yellow zucchini squash, fresh heirloom tomatoes, fresh Roma tomatoes, fresh Chesnok Red garlic, fresh arugula, fresh eggs and fresh, still warm Acme Bake Shop sourdough bread – I have two Muffulettas to make – there is a photo of the sandwich on the recipe at the link. Fresh spinach is probably done for the year – it’s too hot and the spinach bolts (goes to seed).

Another really good dinner tonight. We really try to observe the Meatless Monday, along with seafood on Friday. The wine went so very well with the cannelloni and the cheese. It is fun to try to keep the dinners inline with what day of the week it is. We are not always successful. But tonight, we were. Enjoy!

Hope it goes as well with this great seafood combination. The components for the salad were all from the Boise Farmers Market as was the Acme Bake Shop sourdough bread. We always eat so well at The Captain’s Shack!

The other evening when we were at a Ridge Winery tasting, they suggested to go with their Estate Cabernet Sauvignon to have a Ridge Winery Lamb Meatloaf. We did not have any of the cab, but we do have some 2003 Ridge Winery Lytton East Zinfandel and it is an awesome wine! We still have 5 bottles in our storage. We made the meatloaf and it too is awesome. Look at these photos I took of the dinner and the the Sunday morning breakfast consisting of a Shrimp and Fresh Asparagus Omelet. Yummers!

We really do try to keep our food supply local and we do Buy Idaho! Cheers.

Farmers-Market-ChickenThe word is … Last week, the Opening Week for the market – was a HUGE success! In the 4 hours that the market is open, there were over 6000 people who visited the market. Most of the vendors were sold out. And if you need a list of the venders, Look Here. You will be surprised as to the number of vendors and the products that are available. I have tried to show some of the vendors in the following photos that I took today. These are the ones that I normally frequent. There are food booths, and some wonderful coffee, too, that will provide some delicious treats. Pasta, waffles, doughnuts and cupcakes, wine and beer, pasta and other goodies, to name a few. Enjoy the photos and tour of the Farmers Market! It was a beautiful, sunny morning so I did not alter the photos. I left the shadows and sunshine in!

River View Gardens. Great fresh garlic, asparagus, spinach, lettuce and onions. They have awesome garlic selections in the fall. Several varieties - I think they have about 9 varieties last year. They also provide information sheets about the differences in the garlics.

Purple Sage Farms. Great almost year round produce. Lettuces, herbs, fermented products, cabbages in the fall and other wonderful products. They have an extensive greenhouse setup that you can tour if you call ahead.

As an End-Note, the Big Valley Ranch is at the Farmers Market and they are supplying Highland cattle meat. The ranch is located in the Horseshoe Bend area. I will be sure to check them out next Saturday. I/we have never eaten Highland beef. “The meat tends to be leaner than most beef because Highlands get most of their insulation from their thick shaggy hair rather than subcutaneous fat. The coat makes them a good breed for cold northern climates and they are able to thrive in outdoor conditions that would defeat most other breeds of domestic beef cattle.” [Wikipedia] “It is beef that comes from Highland cattle that is superior in flavor, tenderness and cooking. Highland (sometimes called Scottish Highland) is a distinct breed of cattle that are generally smaller than Angus…” [The Reluctant Gourmet] Here are some Cooking Tips for preparing Highland beef. Interesting. Sounds a lot like the preparation for Buffalo.

05April2014_1_Boise-Farmers-Market_BoothsSeems like it has been months since we could shop for local products at the farmers market. It has! It’s been since last December when they closed for the winter. But now it’s Spring and the market is Open! Yea! It was great to see the vendors there from last year and their fantastic Idaho products. Acme Bake Shop (fresh Rye and Sourdough), Gaston Bakery (Croissants), Meadowlark Farms (fresh Eggs), Purple Sage Farms (awesome greens), Idaho Honey, Homestead Farms (bone-in Rib-Eye steaks), Rollingstone Chevre and a host of others that I know I am missing. Here are some photos from this morning. I have been asked by many people when Acme Bake Shop will open a store front. I got the answer this morning, “It’s not in the business plan at this time.” Beside the Boise COOP, I will check next week to see where in Boise you can purchase their bread. Cheers and hope to see YOU there next Saturday! And please, Think Local – Buy Local. Support your local farmer.

We just had to come up with something for dinner and we were in “one of those quandaries”. Nothing really sounded good. Then I looked in the freezer and saw some bay scallops – the little ones – and thought, “Maybe a nice Scallop Alfredo.” I passed it by Robin and she said yes. So here is our dinner. And here too is our recipe for Alfredo Sauce. It’s not for the faint of heart – one must be quite heart healthy. (In her book “Easy Tasty Italian”, Laura Santtini says that an Alfredo Sauce is “.. the king of the fresh pasta sauces … and is described as a ‘heart attack on a plate'”) But also know that an Alfredo Sauce is one of the Classic Italian sauces that was designed to complement fettuccini pasta. Enjoy the sauce!

Oh, and yes, don’t forget the Boise Farmers Market at 10th and Grove starts tomorrow, Saturday April 5.
It runs from 9:00am – 1:00pm.

This was another one of those dinners. The last time we had a Montmorency Sauce – recipe below – Chef James Grimes made it for the Treasure Valley Wine Society. An awesome sauce that goes very well with pork, but one of these days we will try it with the 5 Hour Roasted Duck.

Here is the recipe for the Montmorency Sauce.

Montmorency Sauce

“The sweetness makes it suitable for sautéed chicken breasts or roast duckling, as well as more robustly flavored meats such as pork chops.” (Yankee Magazine) “Montmorency cherries get their name from the Montmorency Valley of France, where they originated.” (Product Oasis)

Ingredients:
12 oz Bing cherries, Hood-Crest Dark Sweet Cherries or Montmorency Cherries if you can find them.
1 c Tawny Port
1 large Sugar Cube
2 med Oranges
2 T Cornstarch

Directions:
Drain the Bing cherries and place cherries in a medium bowl. Reserve liquid.

Add 1 cup tawny port to the reserved liquid. Cover the cherries and let stand at room temperature 3 to 4 hours (preferably overnight).

Rub the sugar cube firmly over the oranges to remove zest and aromatic oils from skin. Squeeze orange and measure 1/4 cup juice. Add juice to 2 tablespoons cornstarch and stir until smooth.

In a saucepan, or to deglaze a braised pork pan, combine cherries, juice and port with cornstarch mixture. Cook, stirring constantly, until liquid is thick and clear. Add the sugar cube and stir to dissolve.

4 med laqmb chops, 1/4 c Olive Oil, Salt and Pepper to rare, 1/2 c Italian Parsley chopped, 1 lg clove Garlic, minced, Zest of 1 Lemon. Mix altogether and mash the herbs. Pour over the chops and let marinate for 1 hour. Cook in a 350 degree oven for 20 minutes.

Really ……….. An awesome dinner. Leanne Felzien asked me if I liked these chops better – pastured and grass fed or the feed fed lambs. I like these and so did Robin. The chops were just a little smaller.
