Mazzah, Mediterranean Grill

11Nov2013_1b_Mazzah_SignAnd it was a good lunch! Huge servings. Robin and I should have shared a plate. I ate too much and she brought half of her’s home. Very, very good. Great flavors. Here is a link to Mazzah – Mediterranean Grill. They are located at 1772 W State Street in Boise. (208) 333-2566. They also have a grill at 404 E Park Center Blvd., Suite 250. (208) 333-2563. My only problem is that the service was a little slow. The Chicken Kabobs that I ordered were fresh made, but it took almost 20 minutes. We were there at the lunch hour, so that may have been part of the problem. The restaurant is small. Still good food, though. Just be prepared to wait. Here are some photos from today. Enjoy!

Acme Bakeshop Breads, Angell's Bar and Grill-Renato, lunch menu

DownTownBoise-PostureSuch a great idea!! Plus, as hungry consumers, we get to try some different restaurants in Boise for a cut-rate cost. There are about nineteen different restaurants that are participating in the program this year. My only request is, if a specific restaurant has “special hours” for their menus, please let the public know. For instance, if you advertise a lunch menu, and if there is a time limit on the lunch menu, then please state that the lunch menu is only good until 2:00pm.
If you would like more information about this program, please click this link, Downtown Boise and follow their information links.
We went to Angell’s Bar and Grill-Renato this afternoon and had a wonderful late lunch. Out of 5-Stars, we rated our visit a good, solid 4-Stars. We had a very pleasant conversation with the owners Russ and Marika Dawe and Chef Will. Thank you for taking time from your busy schedules to chat with us. Great to see that they serve Idaho wines, Cold Springs Winery which we had, and Boise bakery, Acme Bakeshop Breads. Superb job, Chef Will! Here are some photos from our visit.

Acme Bake Shop, candied carrots, chicken dinner, plum cake

15Oct2013_2a_Captains-Shack_Plum-Cake_Top-ViewYes it was. Starting at breakfast. Thinking of something for dinner. The arrival from Angel Petrogallo of a wonderful Broccoli Shred Soup – Doctored it somewhat, but very little – and then a good, I think, chicken dinner with candied carrots. Then Robin says she wanted a plum cake (pictured here) and she had a recipe. Only thing is, one must wait 24 hours before eating. “They” say it’s better! You be the judge. Here is our day of cooking. Oh, by the way. We did receive our autographed copy of Two Million Meals Later – House Recipes from Boise’s Brick Oven Bistro today. This is going to be a fun cookbook. Yup! One more for our library. Enjoy.

Yes, I did change it, but only slightly. I added a very little, maybe a 1/4 cup of cream and a dash of salt. It was an awesome soup! Thanks Angel.

This was such a good and different dinner tonight. Fresh young turnips and beets from the Boise Farmer’s Market this morning. Save the greens and steam them too. Add a little red wine vinegar to the steam water and you’ve got a good vegetable dish. And for dessert. Use up those bananas that were almost “gone”. Robin made great Banana Cup Cakes and topped them with some awesome lemon curd. Here. Look at this dinner. Enjoy …. We did!

Robin and I keep asking Maggie what we can make for her to eat. Yesterday, she said she wanted to go to Sushi Joy, a really good Asian restaurant featuring Chinese, Japanese and American dishes, 3 blocks from our house. So today, for a late lunch, Maggie, Robin and I all went to Sushi Joy. Enjoy these photos of our entrees.

This was a really good dinner. It took about an hour to make. The ingredients were as local as possible. Here is the photo of the dinner and a recipe. Enjoy!

Olive Garden Chicken Marsala Recipe

Recipe Adapted By: Bob Young
Serves: 4

Ingredients:
4 Chicken Breasts, boneless & skinless
½ c Flour
Sea Salt to taste
Cracked Pepper to taste
3 T fresh Oregano, chopped
4 T Olive Oil
4 T Butter
3 c fresh Button Mushrooms, sliced
1¼ c Marsala wine

Directions:
1. Pound chicken breasts between sheets of plastic wrap until about ¼” thickness.
2. Combine flour, salt, pepper and oregano in a mixing bowl. Dredge chicken pieces in the flour, shaking off any excess.
3. Heat oil and butter in a skillet over medium heat. Cook chicken breasts on medium heat for about 4 minutes on the first side, until lightly browned. Turn breasts over to cook other side, then add mushrooms to skillet. Cook breasts about 4 more minutes, until both sides are lightly browned. Continue to stir mushrooms. Add Marsala wine around chicken pieces.
4. Cover and simmer for about 15 minutes.
5. Transfer to serving plate. Serve over lightly buttered or olive oil pasta with some diced parsley. This will go well with a Chianti. We had a 2001 Tiziano Chianti Reserva that was ready to be served and went well with the dinner.

13Aug2013_1_Buzz-Chile-Wines_CounterIn spite of all the troubles this past month or so for Cristi, this was an exceptional Wine Club Dinner. (And all for $15 per person!!) Cristi had some superb support – Paul Colwell from BRJ Distributors did a great job in matching the wines with the dinner. And Peggy Hands-Behrens did an awesome job in finding the menu ingredients and preparing this feast. Thank-You both for helping Cristi.
With that in mind ….. The wines that Paul choose went well with the dinner. Cristi’s Choice, not chosen by Paul, was a malbec from Bodega Elena from Mendoza. A good red from the 2011 vintage with an alcohol level of 14.5. A little hot, but good. I rated this red an [18] out of [20]. You can get a bottle for $11.00. Here is what else we had. Enjoy! As you can see, this was a great dinner and some great wines to go with it. If I were to give this event a rating, it would easily be 4 1/2 Stars out of 5. It was that good and the “Step Up Help” did an awesome job. I can not emphasize that enough. Thank-You one and all. Here are some of the wines that were served tonight.

12Aug2013_1_Captains-Schack_Chix-Bombs_GrillingDon’t be afraid! They will not explode. To the left is a photo of the chicken rolled and on the grill. Not very hard to do, but it does take a little time and a little care. Look at the recipe below. A fun and very good way to prepare chicken. Almost like a Cordon Bleu, at least for the stuffing practice. But do try it. Adjust the recipe as necessary and remember that the recipe as listed is for 10. No problem in cutting it in half. One Chicken Bomb is probably plenty for one person. Serve this with a great Hendrick’s Gin, Gin and Tonic. Enjoy!

Chicken Bomb plated with Baked Corn

Chicken Bomb plated with Baked Corn

Chicken Bombs

Makes 10 Chicken Bombs

Ingredients:
5 boneless, skinless, chicken breasts
5 jalapeño peppers
20 strips of bacon
4 oz cream cheese, softened
1 cup grated colby jack or cheddar cheese
salt and pepper to taste
1 cup BBQ sauce (I look for low sugar — always )

Directions:
Slice chicken breasts in half width wise (Each half will make 1 Chicken Bomb). Place between two pieces of wax paper and pound to 1/4 inch thickness. *A rolling pin also does the trick. Season each with salt a pepper.

Slice jalapeños in half, length wise and remove seeds, ribs, and the end with the stem. In a small bowl, mix your softened
cream cheese with your grated Colby jack.

Fill each jalapeño half with about 1 Tbs cheese mixture. (Sometimes I use more)

Place 1 jalapeño half at the end of each pounded breast piece. Roll over and together. *It doesn’t always close the way you think it should. No worries! The bacon will pull it all together.

Wrap each breast piece with 2 slices of bacon. I do 1 at a time (obviously), and just sort of wrap tightly and tuck the
ends of the bacon under the strips. It all comes together in the cooking process. I promise you do not need toothpicks!

Preheat your grill to 350 degrees. Cook over indirect heat for 20-25 minutes; turning every 4-5 minutes. Baste chicken with BBQ sauce each time you turn it. Giving it one final basting right before it’s done. Chicken is ready when it reaches an internal temp of 165 degrees. If you don’t have a meat thermometer, pierce chicken with a fork. If juices run clear, it’s done!

The Chicken Bomb opened up to see the jalapeno stuffing.

The Chicken Bomb opened up to see the jalapeno stuffing.

This is not a hot – spicy – meal. I removed the ribs and the seeds to keep the heat low. If you want more heat, leave the ribs and seeds in. And I only used 1 piece of bacon per bomb. It held up very well. Cheers!

The completed chicken tagine.

This Chicken Tagine with Mushrooms and Moroccan Green Olives just looks so good! We do like the tagine style of cooking as it concentrates flavors and makes items so very tender. I got this from a Facebook group, Moroccan Cooking. Now I need the recipe. I have requested it, and we’ll see if I get it. At the very least, we can “wing it”. (No pun intended!) There is also a well recommended cookbook on Moroccan food called The Food of Morocco by Paula Wolfert. It is available on Amazon for about $39.00. You can also find it on her webpage at Paula Wolfert. Can’t wait to try this!! Enjoy!!
