BFM, BFM Drive-Thru

This was really an easy week for grocery pick up at the BFM Drive-Thru on Shoreline Drive in Boise. The line moved pretty quickly. They have changed their modus operandi. It works out very well. I had a 9:15 pickup time and I was through the line in about 10 minutes or less. Here is a link to The Market Information.
And too. It’s great to hear a friendly and cheerful voice under the mask that they all wear -m I wear mine, too! Here are some photos from the process this morning. But I do miss the interaction with the vendors, but that will come. Enjoy!

The line was long, but it moved quickly.

The Drive-Up line

Picking up the order is an easy process. They direct you to a table. You show them your name and the time you are scheduled for. They go and get your already filled order, bring it back to you and put it in your vehicle, if you want them to. You’re done!

Order pick up.

My order in the back of my car. Notice the paperwork – your name, time and products ordered. Your credit card is not charged until you pick the order up. No Cash is transfered!

Our order displayed. From Acme Bakeshop Sourdough Loaf and a Turmeric Baguette, Baby Turnips, Salad Greens, Watercress and Bok Choy.

From Acme Bakeshop a wonderfully delicious Turmeric Bread made fresh. It will go very well with our lamb chops (Meadowlark Farms) tomorrow.

Bacquet's Restaurant, Escargot, Fois Gras

OK. This is an awesome French restaurant in Eagle, ID, just west of Boise. I know of no other French restaurant in the area of this caliber. Definitely a 5-Star restaurant! It really replaces Le Café de Paris and Andrea’s. Both of which have closed. Great interior ambiance – like sitting in a French café. The patio offers seating also, but on our visit, it was very hot. You may also have live music on the patio. It would be best to call for reservations if you decide to go. Both Chef Franck and his wife Michelle are very warm, charming and interesting. Anxious to answer question you may have. Here is some of the dishes we had and they were awesome. Delicious! Beautifully presented. Enjoy. We did. We’ll be back! Left-Click any of these photos to see them enlarged.

Robin is happy with the food.

Now how good is this? Looks difficult to do, but surprisingly easy. Guess you want the recfipe. Here it is; Long but easy.

Porcini Rubbed Ribeye and Eggs

Adapted from: Chef Mario Batali
Ingredients – Porcini Rubbed Ribeye:
2 T Sugar
1 T Celtic Sea Salt
1 t freshly ground Tellicherry Black Pepper
1 t Red Pepper Flakes
¼ c Porcini Mushroom Powder
5 cloves Garlic, peeled and minced
¼ c Olive Oil
2 Ribeye Steaks, bone-in, 2-inches thick

Ingredients – Bruschetta and Eggs:
2-3 T Olive Oil
4 lg Eggs
1 loaf crusty Italian bread, sliced ½-inch thick
3 cloves Garlic, peeled
Extra-Virgin Olive Oil, to drizzle
large crystal Celtic Sea Salt, to garnish

Directions – For the Porcini-Rubbed Ribeyes:
In a small bowl add the sugar, salt, black pepper, red pepper flakes, mushroom powder, garlic and 1/4 cup olive oil and stir well to form a thick paste that is the consistency of wet sand.
Rub the paste all over the steaks, coating them evenly. Wrap tightly in plastic wrap and refrigerate for at least 12 hours or overnight.
About 1 hour before grilling, remove the steak from the refrigerator and brush off the excess marinade with a paper towel. Remove to a plate and allow to come to room temperature.
Preheat a grill or grill pan over medium-high heat. Place the steaks on the grill, cover and cook, turning every 6 to 8 minutes for 10-15 minutes for medium-rare, the internal temperature with a meat thermometer should be 125ºF. Transfer to a carving board and let rest for 15 minutes. After the meat has rested, thinly slice against the grain.

Directions – For the Eggs and Bruschetta:
In a large nonstick pan, add a couple tablespoons of olive oil and place over medium heat. Add the eggs and cook until the whites are set but the yolks are still runny. Season with salt and pepper. Serve with the steak.
Reduce the grill to medium heat and place the bread on top. Allow to cook until toasted and lightly grilled on both sides, about 1 minute per side. Remove and rub with a clove of garlic, drizzle with olive oil and sprinkle with sea salt. Serve with the steak and eggs.

Tip: Use your favorite herb rub if you can’t find dried porcini or porcini powder or grind your own dried porcinis.

Basil Treads

16July2015_1_State-And-Lemp_Robin A couple days of some really good eats – good food! The weather is not 100+, it is 58 degrees at night and in the mid 80’s during the day. I’ll take that. The Soda Fire is 90% contained and rehab has started for the grasslands – it’ll take two to three years for it to totally come back. Grazing will be at a premium. Wild horses are being cared for and watched for injuries. All seems as well as it can be under the circumstances. Back to the kitchen!

I asked Robin what she wanted for breakfast. Without even blinking an eye, she said, “Shrimp and Grits.” I asked her if she wanted some scrambled eggs with that. She said, “Just one egg.” I had some, too!

Such a yum couple of merals. Such a great time in the kitchen!

Olive Oil Tasting

Robin-Bob-In-Kitchen_Looking-RightThere are wine tastings; there are salt tastings; there are pepper tastings and yes, there are olive oil tastings. If you ever get the opportunity to do a “comparative tasting” of some product, do it!
From Trader Joe’s, they do carry some good products and some hard to find products, there are some helpful hints for Tasting Olive Oil, or a Guide to Extra Virgin Olive Oil. Yes I know, this article is mostly about their olive oils, but the basics – tasting, cooking with or storing – are in this link. Here is some brief information on olive oil, these happen to be from Trader Joe’s. And sorry if this sounds like an ad for Trader Joe’s, it is not! It is good information, though.

Hippocrates called olive oil “the great therapeutic.” Homer called it “liquid gold.” For some, that’s reason enough to slap on a high price tag and call it a day. [We]seek out Extra Virgin Olive Oils from experienced producers in the world’s best growing regions — Spain, Italy, Greece, California… Then our tasting panel examines them from every angle: body, fruitiness, bitterness, pungency…

If you would like to organize and have your own olive oil tasting, here are some helpful hints for – Hosting and Olive Oil Tasting, and be sure to read and copy the section called Prep Your Tasters. Some things you might need, beside a variety of olive oils, are Tasting Sheets, [PDF], paper bags, permanent Marker, wine glasses, small bowls, spoons, pens, Granny Smith apples, sliced, sparkling mineral water, chilled and maybe baguette, warmed and sliced. Those are all suggestions from Trader Joe’s. Read the articles in the links and get more ideas for hosting your own olive oil tasting, or other kinds of tastings. Thanks to Robin for finding this link and sharing it. Cheers!

28Dec2013_1_Foodie-MeetUp-Bonovino_Card-FrontOn December 28, the Boise Foodie Meet-Up group – see their link in the sidebar – visited Bodovino Wine Bar (an excellent website!) and the experience was a good one. Good food, really good service and a unique venue. You purchase a “card” with some dollar amount, and then you can visit up to 144 different wines (see photos below) and get whatever wine you desire and whatever amount you wish, 1oz, 3oz or 5oz. Each wine and each amount has a different price and they range from $1.00 to $12.00 (the highest I found).
The tapas that we had was very good. A nice selection of cheese, pasta (pizza) and antipasti. They have a full selection of menu items, including salads and sliders, and all seem to be reasonably priced. Overall – a good experience. I will rate them 4-Stars out of 5-Stars. The room that we were in, there are several, was very noisy and loud. Otherwise, good. We will probably return. Please enjoy these photos. You will get some idea of the ambiance and of the tapas. Cheers!!
