Every once in a while, one comes across a variation to a classic recipe or style. This one I was dubious of. Who wants to tamper with a classic Eggs Benedict? It took me about a week to build up the courage to do so and I was pleasantly surprised. This really isn’t bad. A change.

Using a basic and classic Hollandaise Sauce (https://www.rockinrs.com/CIA-Basic-Hollandaise.pdf ) some lightly toasted Jewish Rye or Marbled Rye can be used also, some ham – I used a thin sliced Black Forest Ham – poached eggs and asparagus with diced caramelized spring onions and their greens (put uncooked diced green onion and greens on the Hollandaise, which I forgot to do, so I put them with the asparagus).

Just a note on making a Hollandaise Sauce – Use fresh eggs, the fresher the better from your local farmer – and I used large or jumbos, which ever is available. But most important is to keep the temperature in your double boiler to 130 degrees F or lower!!! The sauce is likely to break making scrambled eggs if you don’t watch the temperature.

Have a good time with this if you make it. You can vary your Eggs Benedict anyway you want.

This week in mid February, 2019, was dedicated to the one I love. (There ought to be a song written to that phrase!) A week in the kitchen. Planning. Finding. Testing and tasting. Preparing. Serving. It was an exciting week and very fulfilling. I know she liked the meals – they are all gone! That’s always a good sign. Here are some of the dishes we had. And to answer the question – someone did ask – yes I did make all of this. There are recipe links where available. Enjoy! (Left-Click any of these photos to see them enlarged.)

Eggs Benedict are always liked. Especially on a Sunday morning.

Crab Louie salad is awesome.

Or maybe a Crab Omelet one weekday morning.

Scallop and Watercress Salad makes a great dinner.

The absolute best meal, and the one that took the most time, patience and tasting, was this one. The sides that Robin wanted are checked in red. The salad and the entree are fixed.

Two sauces were made for the entree – Lemon Butter Sauce for the lobster, and Brandy Mayonnaise Sauce for the crab.

After all of these delicious seafood meals and all, we had to make something, well ………. more subtle. Like some Robin’s Vegetable Soup. But this is not your standard peas, corn, tomato, etc soup. Try some leek, celery, turmeric, etc soup. It is delicious!!

Tango-Corte-Window-FloridaI reported earlier that we received a luscious, fresh Alaskan salmon from our neighbor. Here are two breakfasts that we made. I updated the Easy Blender Hollandaise Sauce and I think this one is a little better. Another layer of light flavor. Great on the Eggs Benedict with Lox we had. Would also be good on asparagus.
Both of the breakfasts below have Robin’s Icebox Lox in them. Again, this one really turned out great. Take a good look at the photos – enlarge them using Left-Click – and enjoy! Both of the recipes listed are really easy to do. The Hollandaise may be the most difficult of the two. And just to note: The Eggs Benedict is not an everyday breakfast, although it would be good!

01June2014_1b_Captains-Shack_Modified-Benedict_Fresh-Fruit_Plated-BetterYes. I know. It’s a sin to modify Hollandaise Sauce, even if it is this Easy Hollandaise. So how did I modify the Eggs Benedict? First of all I used some lightly toasted and very fresh Acme Bake Shop Sourdough Bread and then to the Hollandaise, I added 4 large leaves of chopped fresh basil. You can see the large pieces of the basil – from our yard – in the sauce in this photo. What else was local? The eggs. From Meadowlark Farms. Fresh. Deep orange yolks. Delicious eggs. The fresh fruit cup was from The Strawberry Lady at the Boise Farmers Market yesterday, and they too are awesome. It was a great breakfast. Loved it.

The Wise Ole Owl says that if you have not tried this fantastically easy Easy Blender Hollandaise Sauce (Russ Terrell, this is still the best Hollandaise going!), you need to re-think your kitchen challenge. Notice, I said challenge not ability. If you read this blog, then your ability is sound. This recipe is soooooooooo easy and quick. And we tweaked the Eggs Benedict below and changed the bread. We did not use the English Muffin, as is traditional, but instead, we used a slice of lightly toasted Acme Bake Shop Sourdough. The bake shop is at the Boise Farmers Market each Saturday at 10th and Grove in Boise. Get yourself a loaf, or two! The best sourdough in town.

A couple of weeks ago, we went to the Orchard House in Marsing, ID. and I had what they call the B o B – Best of Both. Eggs Benedict with Ham and Eggs Benedict with Spinach and Salmon. OK. It’s been two weeks since I have been in the kitchen. Withdrawl!! Back to the comfort of our awesome kitchen. What to make. It’s Sunday morning – I usually make some special breakfast. OK. Just got fresh eggs from Meadowlark Farms in Nampa, ID. We have some ham and Robin bought some fresh English Muffins. We have lemon and cayenne and unsalted butter. How about Eggs Benedict? Sounds good to me. Make the Hollandaise from scratch with Russ’ recipe for Easy Blender Hollandaise Sauce. And as long as it has taken me to write this, I could have made another batch. It’s that easy and that good! The recipe is also held permanently in the Boise Foodie Blog Recipes above. Here is the result of about 20 minutes in the kitchen. Yum-O!
