21sept2013_2_robins-bday-captains-shack_gumbo_getting-happyThere must be 100 recipes for Stained Glass Potatoes or Stained Glass Potato Chips. But basically, most of them just use parsley. We like the addition of other herbs and edible flowers – pansy, viola, violets, etc. These flowers and herbs add some color to the “window”. Much less, flavor to the chips. Fun to do, but somewhat time consuming – it takes a while to place the herbs and flowers just in the right place. We baked ours at 400 ºF for 6 minutes and then turned the baking sheet 180º for another 6 minutes. All of the recipes that we looked at said to line a baking sheet with parchment, place the potato slices on the parchment, add a second sheet of parchment and then a second baking pan. Weigh this all down with bricks. We used a cast iron skillet for weight. One source for the recipe is from Martha Stewart at Parsley Potato Chips. She uses parsley, but we like the flowers and herbs better. The preparation and cooking process is the same. Here is a pictorial journey through the process. Mardi Gras Cajun HouseRobin and I are BIG believers in buying local and supporting our local farmers. Even in the winter when the Saturday Farmers Market is closed. (Due to open the first part of April at 10th and Grove!) We shop wise! We check the labels! This breakfast was 100% local products. The sourdough bread from Boise; the bacon from Twin Falls; the potatoes from Burley and the eggs from Nampa. And it was scrumptious. Check this out!

17Mar2015_1_Cloud-9_SignAnd it was a rousing St Patrick’s Day celebration and birthday party!! The turn out was superb. The food was awesome as usual and the beer/ale was outstanding! Glad they are so close to us – about 1 1/2 blocks. A nono brewery produces less than 5oo cases per year. They are small but they are sure delicious! Here are some photos from the evening. They had to put a tent up outside in addition to the patio seating. It must be a Rite of Spring, because it sure did feel like it. Happy Birthday Cloud 9! Here’s to many more! You are definitely a 4+-Star Pub (Out of 5-Stars). Love it!

Get to know your local farmers, and they will probably be able to get you some of their product that is not available in the stores. 29Dec2014_1a_Captains-Shack_Buddy_With-TeddyBear_GoodWell, 2014 has been a good year. We spent some time on a houseboat in Portland, OR. We saw my brother and sister in Jacksonville, FL – I had not seen them for “too many years”. We saw old high school classmates in Florida, too. Had a great time in the kitchen and will be making our own pasta from now on – we got a pasta machine for our Kitchen Aid – and we will be making our own pie crusts now. The store bought ones although being good, have too much salt in them. Buddy, pictured here with his Teddy Bear, is now 12 years old. Here is how we are preparing for the New Years celebrations – Our menu.

2014-Sauerkrout-LabelYup! It’s that time of year. Sauerkraut comes out of the crock and goes into pint jars. 8 of them. 14 lbs of fresh Idaho cabbage was fermented (krautenized) for 12 weeks at 65 degrees F. Oh yum! And it passed the test – Robin said it is good! And the graphic here is our label. But before one works on the kraut, one must have a good breakfast or two. Breakfast first …. Kraut second. Robin-Bob-In-Kitchen_Looking-RightReally not difficult to do and sooooo much more tasty! Beats any pre-packaged meal – I control what is in the dish: Salt, sugar, herbs and spices. You say you don’t have the time to make a “from scratch” meal? These two meals took about 30 minutes and they were on the table. Local products whenever possible – beef, potatoes, tomatoes, bread, gravy (made from scratch) and onions. And the Tomatillo Salsa Verde was definitely all local and made from scratch. 12 half pints made and canned! The end of the tomato season is upon us, so what better use than to make salsa. In this case, from tomatillos. Check with your local farmers market – that includes local produce stands – for locally grown and produced beef, potatoes, tomatillos, onions, peppers and herbs. It’s just so much better than commercially produced produce. The Boise Farmers Market moves indoors this week and runs through mid December. Then it closes until next Spring. Can and freeze those products and have “fresh” all winter. Here is what you can make for dinner and breakfast. Enjoy!

I ate one of the Basil Lime Cookies and immediately thought of a lamb dinner. Hmmmm. Oh well, make them and let us know what you think. Like them? Don’t like them? Yup! She is a turophile: One who is knowledgeable in cheese. A cheese lover. And Velveeta just does not enter into the conversation very much. (However we have had some in our refrigerator in the past 30 years – some.) The information printed here came from one of her subscriptions, “Word of the Day”.

Surely the turophiles at our table can recommend some good cheeses to pair with our wine selection.

Discussion: Are you stuck on Stilton or gaga for Gouda? Do you crave Camembert? If so, you just might be a turophile, the ultimate cheese lover. From an irregular formation of the Greek word for cheese, tyros, plus the English -phile, meaning “lover” (itself a descendant of the Greek -philos, meaning “loving”), turophile first named cheese aficionados as early as 1938. It was in the 1950s, however, that the term really caught the attention of the American public, when Clifton Fadiman (writer, editor, and radio host) introduced turophile to readers of his eloquent musings on the subject of cheese.

A turophile ranks right up there with an oenophile, “…Oenophilia (/ˌiːnɵˈfɪliə/ ee-no-fil-ee-ə; Greek for the love (philia) of wine (oinos)) is a love of wine. In the strictest sense, oenophilia describes a disciplined devotion to wine, accompanying strict traditions of consumption and appreciation. In a general sense however, oenophilia simply refers to the enjoyment of wine, often by laymen. Oenophiles are also known as wine aficionados or connoisseurs. They are people who appreciate or collect wine, particularly grape wines from certain regions, varietal types, or methods of manufacture. While most oenophiles are hobbyists, some may also be professionals like vintners, sommeliers, wine merchants, or one who tastes and grades wines for a living.”

Tango-Corte-Window-FloridaOh yes once again! We do like the duck done this way. Made Creamed Spinach with Grand Marnier Cream and Baked Sweet Potato and Duck Gravy. Certainly was delicious! And then top that off with a super good 1985 Rose Creek Winery Cabernet Sauvignon. That is still a super wine. On a scale of 1-20, easily a 19.7. So close to the perfect 29 year old Cab.
