04May2013_1_New-Boise-Market_BoothsThe New Boise Farmer’s Market at 10th Street and Grove in downtown Boise, held their Grand Opening today – it rained the day they had originally scheduled the Grand Opening. Today was crowded, no rain and sunny, and everyone seemed to be enjoying the food, the produce, the beef and buffalo and lamb and chicken. Fresh herbs are also available along with fresh tomatoes and tomato plants. Do you like goat cheese? See the Rollingstone Chevre booth for fresh made goat cheese. All types. On November 12, Robin and I were invited to attend the Whole Foods Media Tour by Glenda Catron. Thank you, Glenda, it was informative and interesting. The public tour, also held on the 12th, was well attended and filled up quickly. The “Ribbon Cutting”. also know by Whole Foods fans as the “Break Bread Ceremony” where a giant loaf of bread will be shared, will be at 9:30 am on Wednesday, November 14. Here are some interesting facts that Ben Friedland, District Manager of Whole Foods, pointed out to us. There are 342 stores in the US, Canada and United Kingdom and all of them are designed differently to reflect the community where they are located. As he said, “When you walk through the doors, it’s like walking into your kitchen pantry. We want you to feel at home.”
It is really great to see all of the local, Idaho Produced and Grown items. Some of the Idaho businesses represented are: Gaston’s Bakery, Zeppoles Bakery, Rollingstone Chevre Cheese, Ballard Family Cheese, and Homestead Natural Foods. All of the meats at this store are 30-40% locally produced. This is by no means the total list.
And Idaho wineries are also represented and I think the Idaho breweries are too.
Non-GMO products and quality products will be found here. Read the labels and be familiar with the PLU codes. (GMO products start with an 8. 80000 would be a GMO. 90000 products are organic.) It’s been an interesting eating day. And super moon day. And Kentucky Derby day. Here is what we had for dinner tonight. Wild Rice Salad, Fruit Bread and Fiddlehead Ferns with Ramps, Asparagus and Mushrooms. All from the Boise Saturday Market. Well …. Mostly – The bread was not. Wonderful!!

Lyle’s Golden Syrup

I had a question posed to me by one of the readers of this blog. “I’ve just discovered your blog. Obviously, I don’t get much time to cook, let alone read about it. Anyway, I found you as I was trying to find a place in Boise where I can buy Golden Syrup. I found a recipe for butterscotch pie that I would like to try. The recipe says the “key” is the golden syrup. So I hope someone knows where I can get it in the valley. I’m looking forward to reading more in your blog. McCall”


Here is what I have found from O Chef.

Golden syrup, long popular in Britain, is becoming more broadly available in this country. Lyle’s Golden Syrup is the most common brand, and we have seen it in supermarkets in some pretty out-of-the-way places. It is also available in specialty stores and online.

Golden syrup, like molasses, is a product of the process of refining sugar. It is simply sugar cane juice that has been boiled down. It has the consistency of corn syrup, but a golden color and a taste different from either light or dark corn syrup, and also substantially different from its cousin, molasses. … if you must, you can try substituting it with 2 parts light corn syrup and 1 part molasses or equal parts of honey and light corn syrup.

Golden syrup was invented in 1883 by Scottish businessman Abram Lyle, when he discovered that a byproduct of the sugar cane refined at his factory in Plaistow, east London, could be made into a delicious spread and sweetener for cooking. First sold to Lyle’s employees and local customers in wooden casks, the iconic green and gold tins that Lyle’s golden syrup is sold in today were introduced in 1885. The tin bears a picture of the rotting carcass of a lion with a swarm of bees, and the slogan “Out of the strong came forth sweetness”. This is a reference to the Biblical story in chapter 14 of the Book of Judges in which Samson was travelling to the land of the Philistines in search of a wife. During the journey he killed a lion, and when he passed the same spot on his return he noticed that a swarm of bees had formed a comb of honey in the carcass. Samson later turned this into a riddle at a wedding: “Out of the eater came forth meat and out of the strong came forth sweetness”. While it is not known exactly why this image and slogan were chosen, Abram Lyle was a deeply religious man, and it has been suggested that they refer either to the strength of the Lyle company or the tins in which golden syrup is sold. In 1904 they were registered together as a trademark, and in 2006 Guinness World Records declared the mark to be Britain’s oldest brand. Lyle’s golden syrup was awarded a Royal Warrant in 1911.


In 1921 Lyle’s business merged with Tate, a sugar-refining firm founded by Sir Henry Tate in 1859, to become Tate and Lyle. Tate and Lyle is the only cane sugar refiner in the UK and is the largest in Europe. It currently sells a million tins of golden syrup each month. To celebrate the 125th anniversary of golden syrup in 2008, Tate and Lyle sold the product in limited-edition gold tins.



And if you still need some background, you can look at the source of the product, Tate and Lyle. But most of the information that I have found says that you can probably find it at some larger grocery chains, Albertson’s I would suggest or the Boise Coop. Let us know what you have found. If local sources don’t pan out (no pun intended) you can buy online. I have seen prices range for a 1 pound tin (454 grams) $8.00 to $12.50. Good luck and cheers!

More On Taste #5 Umami Paste™

Sorry that it has taken a while to get this information. But I think it is worth the wait. Here is some really good information on the Taste #5 Umami Paste™.
1) The source for purchasing is Cardullos in Cambridge, MA and they are good to work with.

2) The website for direct information and recipes is Laura Santtini. It is an interesting site.
3) From her web site, the ingredients are “Taste #5 Umami Paste™ is a combination of everyday Mediterranean ingredients packed with umami, ripe tomatoes, Parmesan cheese, Porcini mushrooms, salted anchovies, black olives and balsamic vinegar.”
4) The product originated in England, London I believe. The web site comes from England and, therefore, the measurements in the recipe listed below are in metric measures. I have tried to translate the measurements to degrees F, pounds and cups where necessary. The US really should go to the metric system. It’s so much easier.
5) Here is a recipe from the web site using Taste #5 Umami Paste™ with a leg of lamb. There are many more recipes available on the web site.

Leg Over Lamb

Called so because, with a cooking time of 6 hours you have plenty of time to do all sorts of things, like drink coffee and read the Sunday papers!
Ingredients:
2kg (4.4 lbs) leg of lamb
4 garlic cloves cut into 3
2 sprigs rosemary cut into 1” lengths
1 good squeeze of TASTE #5 UMAMI PASTE™
3 tbsp extra virgin olive oil
4 red onions cut into quarters
350ml (1½ cups) red wine
125ml (½ cup) port (if you do not have, increase wine to 475ml)
1 tbsp balsamic vinegar (thick sort)
1-2 tbsp of jelly (mint, rosemary, red currant, sage)
1 tbsp chopped fresh rosemary
1 tbsp chopped fresh sage
1 tbsp chopped fresh mint

Directions:
Pre heat the oven to 120°C (250ºF).

Randomly make slits in the lamb, and stuff each hole with a piece of garlic and rosemary using your finger to push them right in.
Heat olive oil in a large casserole, add lamb and brown well on all sides. Season with salt & freshly ground black pepper and add the onions, red wine a good squeeze of TASTE #5 UMAMI PASTE™ and port. Mix jelly, balsamic vinegar and herbs together and spoon over the lamb. Cover with tight fitting lid and cook in the oven for around 5-6 hours until falling off the bone. (Source: Laura Santtini)

I must say that ordering online was easy, although I had made a mistake. A Cardullos representative was on the phone to me – initially by email – within 24 hours of placing the order and everything was straightened out. They were polite and extremely helpful. Now ….. To the kitchen!!! Cheers!

Robin and I went to the Tomato Festival in Carmel, CA a few years ago and it was fantastic. They had over 600 varieties of tomatoes for you to try. I made it to about 300. I have come across some more interesting information about the condiment called Taste #5 Umami and it has to do with the ingredients and where to purchase. For those of you the Cambridge, MA area, the choice is easy as it can be found at Cardullos, 6 Brattle Street, Cambridge, MA 02138. It is available from them online.

Also, here are the ingredients, which Do Not include MSG.

“Umami Paste, Taste # 5

Umami Spiced Tomato Puree, The Ultimate Flavor Bomb to Enhance any Savory Dish. Can Be Used Raw or Cooked.

This recipe is from one of the Facebook cooking groups I belong to and from the Life Style Food (Australia) online group. This is a recipe for Sfiha – Arabian Meat Filled Pastry. I looks interesting. I altered the recipe to use lamb, but you can also use beef. And I suppose, that if you really want to be non-traditional, try using ground pork or chicken or turkey.
