This soup, or chowder, Coconut Shrimp Soup really makes an awesome dinner. Rich and smooth with a slight hint of spice. If you like it hotter, just add more cayenne or paprika. I have also placed a link to the recipe in the recipe file above. Enjoy!

Boise Farmers Market, farmers market, fresh strawberries, super bike lane

31May2014_1b_Farmers-Market_Strawberry-LineGreat to have Purple Sage Farms back at the market after graduations and weddings. Congratulations! But we did miss you. Also great to have fresh strawberries in today and fresh carrots!
I have been riding my bike to the market every Saturday because the City of Boise has added a super bike lane to Main Street going East and Idaho Street going West. These specific and guarded lanes help to keep the riders much safer. They are a great thing and I hope they keep them. Enjoy these photos!

Not to long ago, we were watching the Cooking Channel and Bobby Flay came on with an add. He was making meatballs and then using a yogurt and parsley sauce with them. I think we duplicated that tonight. We made our meatballs out of a 50/50 blend of ground turkey and pork – not sausage – just ground pork. Here is the dinner we ended up with. Super good! Cheers.

Acme Bake Shop, New Boise Farmers Market

While Robin and I were at the New Boise Farmers Market today – nice to have the market indoors out of the cold rain/snow – we came across some of these booths that may be offering specials for the Thanksgiving and Holiday Seasons. All of these businesses have direct links in the sidebar. Call this an Infomercial if you wish, but we do support our local farmers and businesses. Cheers!

Acme Bake Shop. Some really great bread and they will deliver, within reason. Or you can go directly to the bakery in Garden City, just outside of Boise. Enjoy these breads!

Acme Bakeshop Breads, Angell's Bar and Grill-Renato, lunch menu

DownTownBoise-PostureSuch a great idea!! Plus, as hungry consumers, we get to try some different restaurants in Boise for a cut-rate cost. There are about nineteen different restaurants that are participating in the program this year. My only request is, if a specific restaurant has “special hours” for their menus, please let the public know. For instance, if you advertise a lunch menu, and if there is a time limit on the lunch menu, then please state that the lunch menu is only good until 2:00pm.
If you would like more information about this program, please click this link, Downtown Boise and follow their information links.
We went to Angell’s Bar and Grill-Renato this afternoon and had a wonderful late lunch. Out of 5-Stars, we rated our visit a good, solid 4-Stars. We had a very pleasant conversation with the owners Russ and Marika Dawe and Chef Will. Thank you for taking time from your busy schedules to chat with us. Great to see that they serve Idaho wines, Cold Springs Winery which we had, and Boise bakery, Acme Bakeshop Breads. Superb job, Chef Will! Here are some photos from our visit.

07Aug2013_1_Captains-Shack_Stuffed-Peppers_Stuffed-Tomato_Stuffed-Squash_CookingMac and Marnie gave us two huge heirloom squash. I picked some tomatoes from out alley garden and sweet peppers are always great with a good stuffing. What a great couple of days working in the kitchen and coming up with a different stuffing blend and a heirloom Green Zebra Tomato Verde for the stuffing. The photo here is the squash getting ready to be put into the oven. I used an instant read thermometer to check the cooking process and took it out at 175 degrees F. This was very good, even if I do say so myself. The stuffed peppers were for Maggie and Trish whereas the stuffed tomatoes were for Robin. Here are some more photos. Chicken Tagine and Mushrooms with Moroccan Green Olives Revisited

28July2013_1d_Captains-Shack_Chix-Tagine_EnlargedYup! Here it is. We tweaked it a little. Added some carrots and green beans. But that is all. The recipe was adjusted a little too, from the original, but only a little more turmeric and ginger. See what you think.
To the left, is the plated tagine. As you can see, we served it on a bed of lemon infused rice. Probably not traditional, but it added another dimension. We really liked it this way. Overall – We would grade it probably a 4 out of 5. But I think with the additional turmeric, it will be better, possible that 5 out of 5 elusive rating. Also, there is a lot of garlic in here, but it seems to be hidden. Just some of our comments. Try it and see what you think and please let us know. Just remember if you use Spanish olives, rinse them well to remove the vinegar. The preserved lemon may also need to be rinsed. There is a lot of salt in both of these ingredients. Left-Click any of these photos to see enlarged. Cheers.

Here is the adjusted recipe. Thank you Roni Spilios-Kinane for the recipe. Enjoy. This could be used as a basic taagine recipe. Try it, for instance, with lamb shanks.

Chicken Tagine with Mushrooms and Moroccan Green Olives

Source: Roni Spilios-Kinane, Morocco
Oven Temp: 325°F
Cooking Time: 2+ hour
Serves: 3
Note: It really is good! It is my Moroccan Mother-in-Law’s recipe..

Ingredients:
1 lemon cut into wedges
Kosher Salt
¾ c Olive Oil
1 T White Pepper
5 cloves Garlic, chopped
1 preserved lemon, sliced
1½ t ground Ginger
2 t Turmeric
2 T Parsley, chopped
2 T Cilantro, chopped
5 Chicken Thighs, or any chicken parts you want to use
3 med Red Onion
Moroccan Green Olives
Mushrooms

Directions:
First you make your chermoula (marinade) olive oil, salt, white pepper, garlic (to your liking) 3-5 cloves, cilantro, parsley, ground ginger, and turmeric. Mix that all together.

Place your cleaned (with lemon wedges and salt) chicken and let it absorb the chermoula as you massage it into and under the skin (some people use smin (ghee, clarified butter) I sometimes do)

Chop finely about 3 medium onions (or more if you have a lot of chicken pieces or a large chicken) let the onions sweat a bit and then add your chermoula drenched chicken and pour any remaining chermoula over the top. Place the tagine cover.

After about 30 minutes, add some preserved lemon slices and the mushrooms.
When you have about 10 minutes left to cook, add the green olives and let all the flavors incorporate.

You CAN!
a) remove the chicken from the tagine and place it in the oven to get crispy if you like!
b) and/or
c) stuff your chicken with a stuffing of chopped mushrooms, cilantro, parley and vermicelli! This is absolutely delicious!

06July2013_1_Captain's-Shack_Summer-Salad-Dinner_PlatedIt’s a warm summer evening on a link bound for nowhere that we decided to have a wonderful mixed salad. Easy to make, just use your imagination. Here is what we came up with and it was really satisfying.

April Schedule at the BuzzAnother great wine dinner at the Buzz in Boise on June 11. Cristi and Paul do such a great job in paring the wines and the food. And Cristi tries really hard to prepare appropriate foods for the dinner theme. Great job!! This month the wines were from Australia and there were some really good ones and food of a different nature. Cristi will probably post some of the recipes on the Buzz blog. Please write down and reserve Saturday, June 15, 6:00pm – 8:00pm for the Buzz. It’s their Concert Jam Night which is awesome. If you play an instrument, bring it and join in with these super artists! They just love it when you join in. Enjoy these photos of the night. Cheers!

Lamb Ribs and Chop Morel Mushrooms in Dry Sherry and Leek Fondue Spring Bounty Potato Salad Acme Bakery Baguette 2004 Sawtooth Winery Petit Verdot

Oh my. Who could ask for more? So much fun to put together and prepare. Enjoy! We did. Here is the recipe for the Potato Salad. Left-Click these photos to see enlarged and please VOTE above.

27May2013_1a_Captains-Shack_Spring-Potato-Salad

Spring Bounty Potato Salad

Source: Sunset Magazine, May 2013

Ingredients:
2 pounds small Yukon Gold potatoes
1 cup shelled fresh peas
2 tablespoons white wine vinegar
1 cup mayonnaise $
1/2 teaspoon kosher salt
4 spring onions* or green onions, thinly sliced
5 hard-cooked large eggs*, peeled and roughly chopped
About 3 tbsp. chopped tarragon

Preparation:
1. Bring 1 in. water to a boil in a large saucepan. Set potatoes in a steamer basket and steam in pan, covered, until tender, about 20 minutes. Cool in ice water, then pat dry. Cut potatoes into chunks and put in a large bowl.
2. Meanwhile, bring some water to a boil in a saucepan. Add peas; cook until tender, 3 minutes. Drain and transfer to ice water, then drain again.
3. Whisk together vinegar, mayonnaise, and salt in a small bowl to combine. Add onions, peas, and half the dressing to potatoes and gently stir to coat. Add eggs and 3 tbsp. tarragon and gently stir to coat.
4. Spread remaining dressing on bottom of a wide bowl, add salad, and sprinkle with more tarragon if you like.

Note: Look for spring onions (regular onions picked young) at farmers’ markets in spring and at Latino markets year-round. They have a fatter bulb than green onions–which have less crunch but make a good substitute. For perfect hard-cooked eggs, cover them in cold water in a small saucepan and bring to a boil. Remove from heat and let stand 12 minutes. Plunge cooked eggs into ice water, crack all over, and let sit in the water for a few minutes before peeling.
