We just had to come up with something for dinner and we were in “one of those quandaries”. Nothing really sounded good. Then I looked in the freezer and saw some bay scallops – the little ones – and thought, “Maybe a nice Scallop Alfredo.” I passed it by Robin and she said yes. So here is our dinner. And here too is our recipe for Alfredo Sauce. It’s not for the faint of heart – one must be quite heart healthy. (In her book “Easy Tasty Italian”, Laura Santtini says that an Alfredo Sauce is “.. the king of the fresh pasta sauces … and is described as a ‘heart attack on a plate'”) But also know that an Alfredo Sauce is one of the Classic Italian sauces that was designed to complement fettuccini pasta. Enjoy the sauce!

Oh, and yes, don’t forget the Boise Farmers Market at 10th and Grove starts tomorrow, Saturday April 5.

Both dogs like to play with each other, although Cricket is the oldest at about 12. Two delightful animals. With loving care like this, Cricket will do fine. But now for dinner. I knew Chris had a kitchen talent. He made the main course of Chicken Pasta and it was very good. I am sorry the Maddy and Sophia missed it. But Chris did make plate for Maddy. Our friend Maggie, pictured here, came along with us and it was great to see that she was feeling chipper enough to join us. We always like to have her join us in these adventures. I
This was a good meal. Not particularly the best I have had at the Buzz, but very good. I am very salt conscious, and there were two dishes that could have had a little more salt and/or pepper. I will list those dishes below. All in all ….. a fun night with good friends and good food. Glad to hear and see that Bailey is doing OK after her bike fall. This review may sound harsh to some. It is not. Cristi and I talked about some of these comments and I think she accepted them as positive. Like I stated at the start, I really try to watch our salt intake, even if the food seems to need additional salt. And I know Cristi tries very hard to limit the amount of salt in her dishes. This was just one of those times when a little more would have enhanced the dishes. It was still a good dinner. Hope to see you at the next one. Cheers!!!

This one was about Italian cooking, specifically recipes adapted from Giada deLaurentiis’ book, Giada’s Family Dinners. Good things like Italian Caesar Salad with Polenta Croutons – now there’s a switch and a good one! – or Marinated Zucchini and Summer Squash or Linguine with Chicken Ragu. And to top it all off, a Chocolate Pizza. Yup! That’s right. A chocolate pizza! And it was delicious and very rich. There are photos below. Left-Click any of these photos to see enlarged. There were some questions posed by the class and one was, “What is a ragu?” Basically, it is a meat based dish with some type of pasta, traditionally linguine. But a ragu can vary from county to county, city to city or family to family much like the American stew or a Basque paella. Here is what Wikipedia says about ragu.

In Italian cuisine, a ragù (pronounced [raˈɡuː]) is a meat-based sauce, which is commonly served with pasta. The Italian gastronomic society l’Accademia Italiana Della Cucina has documented 14 ragùs.
The commonalities among the recipes are all meat-based and all are to be used as sauces for pasta. Typical Italian ragùs include ragù alla bolognese (Bolognese sauce), ragù alla napoletana (Neapolitan ragù), and ragù alla Barese (sometimes made with horse meat).
In the northern Italian regions, a ragù is typically a sauce of meat, often minced, chopped or ground, and cooked with sauteed vegetables in a liquid. The meats are varied and may include separately or in mixtures of beef, chicken, pork, duck, goose, lamb, mutton, veal, or game, as well as offal from any of the same. The liquids can be broth, stock, water, wine, milk, cream, or tomato, and often includes combinations of these. If tomatoes are included, they are typically limited in quantity relative to the meat. Characteristically, a ragù is a sauce of braised or stewed meat that may be flavoured with tomato, to distinguish it from a tomato sauce that is flavoured with the addition of meat.
In southern Italian regions, especially Campania, ragùs are often prepared from substantial quantities of large, whole cuts of beef and pork, and possibly regional sausages, cooked with vegetables and tomatoes. After a long braise (or simmer), the meats are then removed and may be served as a separate course without pasta. Examples of these styles of ragùs are the well-known ragù alla Napoletana (Neapolitan ragù) and carne a ragù.

So there is how I spent my evening. Robin wants to go to the next class and I have her name on the waiting list. She may go in my place, but it would be fun to do together. Hope you liked this post. Chef Chad Poznick asked if we had any suggestions for these classes to please let him know. I suggested a class using rabbit. Cooking with wine might be another good one.

Robin said that she wanted to make pasta sometime this week. So we bought the supplies, 2 dozen eggs and semolina flour. Combine that with talapia and look at our dinner tonight. Scallops Sauteed in Garlic Butter and Lemon Juice
with
Angel Hair Pasta, Gremolata and Cilantro Topping

Spring Green Salad and Kumquat Dressing

Question now is: What is a Gremolata? Gremolata, an Italian condiment, is made from finely minced parsley, garlic and lemon zest. Traditionally served with veal, it is also an excellent accompaniment for fish and seafood dishes.
Ingredients:
Zest of two large lemons
2 lg or 4 sm cloves Garlic, crushed
4 T finely chopped Italian Parsley
2 t Olive Oil
½ t Salt
¼ ground Black Pepper
Preparation:
Thoroughly combine all in ingredients in a small bowl, cover with plastic, and refrigerate for an hour.

Try it sometime. Easy to make and quite good! Cheers.

April Schedule at the BuzzWow! It was great to see a Full House last night. The first in a while. This year, Cristi’s theme for the Wine Club Dinners is “Wines From Around the World” and she started out with the wines from Argentina. Awesome wines. Awesome dinner. Great job, Cristi!! Started out dinner tonight with the use of some of our final tomatoes and basil. Cold last night and maybe colder tonight. We’re getting close to the freezing mark. Enjoy these photos and our dinner.

Fresh Made Tomato and Basil Soup. It was awesome and went quite well with the fettuccini.

Top the soup with a good dish of Fettuccini with Shrimp and Garden Fresh Tomatoes. Good dinner for a cool evening.

Robin has had several requests for the pasta she made the other night. See the blog post Spinach Pasta and Mushroom Lasagna. So here is her recipe. Good luck and Cheers!

Spinach Pasta
1 box frozen chopped spinach thawed – and squeeze almost dry.
[or you could steam and chop fresh spinach = a cup]
3 eggs
blend well in food processor

1 1/2 cups semolina [or all purpose flour]
pour in the center of your bread kneading surface – making a hill.
Make a little volcanic indentation and pour in the spinach/egg mixture
1 Tbsp Olive oil
tsp salt
keep a little warm water nearby if needed

Mix the pasta ingredients with a fork – working from the edges in
I also use a pastry scraper to pile dry flour over the wet center.
Work with your fingers until you can form a ball. Then knead as you would knead bread.
When the pasta pastry is smooth and elastic wrap it in plastic wrap or tinfoil and let it rest for 1/2 to 1 hour.
This allows the gluten to relax and will improve the elasticity for noodle making.

Lasagne fillings
Grated cheeses – about 2 cups – your choice – peccorino romano, parmesano.
Mozzarella or provolone and/or ricotta
Meanwhile chop one onion – sweat it in a saute pan with 1 Tbsp melted butter until translucent.
Add 2 cups cleaned and chopped mushroom pieces – chanterelle, white or brown crimini.
cook until mushrooms give off liquid. Set aside to cool, reserving liquid and a few sliced mushrooms. *

Preheat oven to 350 F.

Warm 3 cups of milk with one bay leaf, end of an onion spiked with a whole clove and some grated nutmeg.
Make a white sauce base roux in a good size pot with 4 Tbs butter and 1/3 cup flour.
Cook over medium heat – stirring until it just begins to brown.
Add hot milk all at once and using a whisk, keep cooking until bechamelia / italian flavored white sauce is as thick as heavy cream.

Get out pasta rolling machine or long rolling pin. Flour to coat work surface and roller blades.
Taking 1/4 of pasta dough Roll out to #4 on machine or about 1/8 inch thick in a rectangular shape.

Using glass bread pans – coat the bottom with some bechamelia sauce.
Layer a piece of pasta cut to fit the bottom of bread pan over the sauce, slotted spoon 1/3 mushroom mix, a layer of grated cheese to cover.

A third layer of pasta, bechamelia, musrooms, grated cheese.

Fifth layer of pasta, bechamalia, mushrooms
Sixth layer of pasta, bechamelia and grated cheese on the top.

Bake for 45 minutes – let cool a little – slice and serve with a green salad.

* Add reserved mushroom/onion juice to remainder of bechamelia for a wonderful ‘gravy’ over toast
