I just loved this evening sunset sky in Boise as I was leaving the Buzz after a wonderful Monthly Wine Club Dinner – Magazines. Cristi did a great job in explaining to everyone the magazines that are available about wines and also on the rating systems.
She did a blind tasting tonight, a change from her normal format. I liked it. Here is the dinner we had and the wines that Cristi paired with the food. Remember: The scoring is based on 100 points. Enjoy! And the dinner that accompanied the tasting was perfectly matched with the wines and well prepared. We just keep coming back to the Buzz. Opening Wines
These two wines, from South Africa, were really very good. Of the two, I preferred the Chenin Blanc, but the Cab was still good. Using the 100 point scoring, I rated both of these at 92.

It’s been an interesting eating day. And super moon day. And Kentucky Derby day. Here is what we had for dinner tonight. Wild Rice Salad, Fruit Bread and Fiddlehead Ferns with Ramps, Asparagus and Mushrooms. All from the Boise Saturday Market. Well …. Mostly – The bread was not. Wonderful!!

After going to the DotDotDot program, BSU Graphic Artists present their Senior work, we drifted down to Le Cafe de Paris and had an awesome Tapas night dinner. Bacon and Egg Muffin Cups

Here is a recipe that you can make in about 20 minutes and feed a host – many – people. Really easy to do. I got the recipe from one of the many food/recipe blogs that I subscribe to. In this case, Secret Recipe Club. It’s free to join. Enjoy this breakfast! The first photo is when I took them out of the oven. The second, the cups are plated.

Source: Secret Recipe Club – 
Prep Time: 20 minutes
Yield: 8 Breakfast Cups

Note: These are so very easy to make and you can feed a crowd fairly easy. And yes, they are good!

Ingredients:
4 slices of bread
8 eggs
8 slices of bacon
shredded cheese

Bacon and Egg Muffin Cups plated

Instructions:
Preheat your oven to 400 degrees F.

Heat a skillet on medium-high heat, cook the bacon and only allow it to cook for about 4-5 minutes. You are looking for flexible but not raw. While the bacon is cooking, cut two circles out of each slice of bread. I used a circle cookie cutter to make it easier.
Now take that extra bread and either save it for french toast casserole or go tear it apart and feed it to the birds {what we did}.

Spray a muffin tin with cooking spray. Next, lay a circle of bread into the bottom of each muffin cup. Wrap the bacon around the edge of each muffin cup. (I did this part backwards – we did the cheese before the bacon – it made absolutely no difference) Sprinkle cheese on top of the bread slices.

Now carefully, crack an egg into each cup. Megan suggested cracking the egg carefully into a bowl first and then sliding it into the muffin cup. I just did it right into the pan.
Bake them for 10-15 minutes or until the whites have set and the yolk is cooked to your liking (less for a runny yolk, more for a cooked yolk)

Serve with pancakes and fresh fruit – well, we did. And by the way, you cannot eat just one. I don’t care what anyone says, you can’t. It’s impossible.

Here are the eggs we did for Easter. Using white vinegar and food dye. Just as colorful as the store bought dyes. Even more fun is the making of gefilte fish. Look at these photos. All of this was homemade. My hat is off to the Chef! Enjoy!

Yup! That’s Robin making the gefilte fish … from scratch. You can purchase them already prepared, but these are so much better.

 And yes, the Bearnaise is from scratch. Serve the gefilte fish with a glass of Manischewitz and you’ve got a good party going! Cheers!

Brown Shuga Soul Food is having BBq chicken and pulled pork for lunch today will only be on Chinden til 2pm today. Then moving to the Red lion downtown this evening from 5 till 9pm for our monthly food truck rally tonight. The menu for dinner will be bacon and potato soup, mac and cheese, black eyed peas and bbq chicken with peach cobbler for dessert.

What a great Thanksgiving Day and Dinner we had! Robin made this chocolate turkey and it turned out great. Thanks to everyone who joined us for this celebration: Robin, Chris, Madison, Sophia, Mac, Marnie, Margaret and Buddy. Our blessings are many!

Homemade Pizza on Gameday!

It must be gameday, because we had a special pizza! Plus BSU won, 52 – 35 over San Diego State.
Our own made fresh sour dough crust (from scratch), onion, Italian sausage, German brats, black olives, mozzarella cheese,  fresh, from our garden, chopped red, yellow and green Zebra tomatoes, herbs and spices and mixed cheeses.

Add to this a great and aged Chimay Ale, some Blue and Orange M & M’s and we’ve got a party! Hope next week is as good with the Broncos. Hope so!

Salmon with Lemon Curd

The other day, we had a very good salmon at Shige here in Boise. See Dinner At Shige on this blog. So this past Friday, we decided to have salmon again. We do try to eat seafood at least twice a week and we keep a supply on hand. Robin asked how I was going to make it and I told her with a little fresh tarragon. She suggested that I try it with lemon curd. Good idea! It is Mackays Lemon Curd (Mackays Lemon Curd)and we get it from the World Market here in Boise.

I took two salmon filets, 4 oz each, and placed them on a pyrex dish that had some olive oil spread on it, about 1 teaspoon. Then I put about 1 teaspoon of the lemon curd on both sides and baked the fish at 350 degrees F for 15 minutes and then on broil for 5 minutes. Served this with a vegetable mixture that was steamed and it was awesome. Try it —– You’ll like it.
