All Seasons Fun, ID, Marsing, Mexican food, Mexican Restaurant

07Oct2013_2_Motorhome-Marsing_Alejandras-Mexican-MarsingWe took a short trip for a couple of hours, to Marsing, ID to get “The Beast” (the motorhome) winterized. Camping World, which is a lot closer gave me an estimate of $175 and 2 to 3 days. We took it to All Seasons Fun. We have gotten parts from them this past summer and are very happy with the service and the staff. We highly recommend them if you need motorhome or 5th Wheel help and/or parts. They charged $68 and it took them about an hour. (We will take The Beast back in the spring and have them turn the system back on and check for leaks.
OK. So what does this have to do with Alejandra’s Mexican Restaurant? The restaurant is right across the street from All Seasons Fun and we have eaten at Alejandra’s in Wilder and enjoyed it very much. This one was also good and we recommend the restaurant if you are in Marsing. Just good Mexican food. Nothing fancy. Just good! Here are some photos I took. Enjoy!

fire storm, great friends, pot luck, two fires, vegetable platter

11Aug2013_2_Captains-Shack_Fire-Storm_Clouds-ColorGreat food and great friends gathered at The Buzz in Boise to convey our condolences to Cristi and her family for her loss. We were sitting outside and the fire storm from about 50 miles east of Boise and 25 miles north, presented an imposing image of the vastness of the fire. This morning on NPR I heard were the combined two fires was about 120,000 acres. Yuk!
As we gathered, we shared food as a means of bonding our friendships. Everyone who attended, was asked to bring some type of pot luck. And, if you desired, bring a wine. We took a 2010 Fujishin Family Cellars Viognier, a corn pie and grilled fresh herbed zucchini. (Photos are below) Others brought all kinds of wines, BBQ pork, beans, soup, vegetable platter, hot artichoke dip, brownies and different breads. It was a good gathering to show the extent of our friendship for Cristi and her family. Here are a few more photos. Left-Click any of the photos to see enlarged.

Breaded Mahi Mahi For Dinner ….. Warm Beet-Orange Salad Recipe

13May2013_1_Captains-Shack-MahiMahi_Brandywine-Vineyards_Leon-Millot-GrapeYes we did have Braised Mahi Mahi tonight. But first ………….. I was showing the wine cellar to a friend, Mike from Acme Bakery in Boise (Mike makes awesome bread and his rolls are the ones used by 10 Barrel Brew Pub in Boise, for their burgers) when I noticed a seriously leaking bottle. Yes, it was the one shown here. Almost 75% of the wine was gone – most evaporated. But now the question is, how many of the readers here have ever had a wine made from the Leon Millot grape? I never had one. Here is some information from House of Vines blog.

This is another little hybrid that was developed in France. In fact it is has the same parentage as its more well known sibling Marechal Foch. Two other hybrids came from this same cross including Marechal Joffre and Lucy Kuhlman. Leon Millot is an early ripening black grape with small bunches, often 2-3 per shoot the largest usually about 70-80 grams.

It is cold hardy to approximately -25 to -30 c and while bud break is relatively early it is a little later than Foch making it appealing to those where later spring frost can be an issue. It is also known to ripen a few days earlier than Foch but these accounts appear somewhat subjective. Typically it ripens in 135-140 days, with flowering to harvest being about 85-90 days. What is known is that it regularly ripens to the same brix as Foch but does not have the high acidity problems that Foch can have in some years. In fact the juice chemistry is often excellent for wine making. [House of Vines]

Here is the beet salad that Marnie made for Mother’s Day. She got the recipe from the food Network. Enjoy!

Warm Beet-Orange Salad

Place 1 pound beets on a large piece of foil. Drizzle with 1 tablespoon olive oil and 3 tablespoons water; close into a packet. Roast at 400 degrees F until tender, 50 minutes.

Peel the beets and cut into wedges.

Whisk 1/3 cup orange juice, 2 tablespoons olive oil, and salt to taste in a bowl.

Add 2 segmented oranges, the beets and 1/4 cup chopped toasted walnuts and toss.

Enjoy the information and the recipe. Thanks Marnie for sharing this. Please VOTE above. Thanks!

15Dec2012_1_Moms-Chili_In-Pot-CookingToday was the Famous Idaho Potato Bowl here in Boise at the BSU Stadium. So, we needed to have something for our small Tailgate Party. Maybe potatoes? Yes, but with what? How about with my Mom’s Chili Con Carne Modified over a good, baked potato. (The photo to the left is the dish in the crockpot!) Wow! It was great! and it did bring back some memories of her making the chili. I just had to modify it because Robin can not eat sweet green peppers. So I modified Mom’s recipe and used Poblanos that I fire roasted on the grill. And most of this was locally grown: the beef, potatoes, onions and peppers. The tomatoes were not. Here are some photos with the Chili over a fresh Baked Potato. Enjoy!

Here is the chili plated with a Stella and a Belhaven to accompany the dish.

And plated with just a Belhaven. A very creamy smooth and slightly sweet Scottish Ale.

Roast Chicken and Green Beans

08 Sunday Apr 2012

Posted by Bob and Robin in Beans, Celebrations, Ethnic Foods, Holiday Menu, Photos, Photos By: Bob Young, Special Dinners, Special Events, What's For Dinner?

This has really been an ethnically diverse weekend menu. Especially since Passover and Easter happened to be on the same weekend. It all started Friday with the Gefilte Fish meal. Although I don’t think gefilte fish with Bearnaise is Kosher. (See Good Friday Meal earlier on this blog.) But it has been fun. And it is particular rewarding and pleasing when one of our very special Jewish friends here in Boise reads this blog and then calls to get the recipe for the gefilte fish. It will be fun to see how he made out with the dinner and the recipe. In the meantime, here is what we had for dinner tonight. The above photo is an Asparagus Mousse that Robin is making for dinner tomorrow. We had a sample tonight and it is so awesome. Rich and smooth and the succulent flavor of asparagus.

Gremolata Popovers

Roasted Chicken
roasted root vegetables, rosemary, lemon

Plated dinner
Oven Roasted Chicken
Haroset Salad
apple, roasted walnuts, brown sugar, cinnamon, Manischewitz wine
Green Beans
Gremolata Popover

Oh what fun. Not only preparing these delights, but eating them and trying to understand what all this means. I may have to talk to Joe to get the significance of all of this. Cheers and tomorrow is the big meal. That will be fun, too!

Here’s A Great Chili Recipe

16 Thursday Dec 2010

No matter what you do, don’t forget to serve this chili with a Stella!!! But, before you can serve it, you have to have The Recipe. And this is, even if I say so myself, one awesome chili. Not your run of the mill chili. It has some very different ingredients in it. Chocolate for one. It does take some time to prep and to cook. But you can make it ahead of time. Have fun with this one and enjoy!

Seafood Almondine

12 Sunday Sep 2010

This Seafood Almondine actually was quite good. And besides, my Doctor would be pleased that I am eating so well – I did loose 21 pounds since my last appointment with him this past Spring – while he is eating his Rib-Eye and French Fries. It’s not that we eat less – we eat smarter! Heres what we had.

Le Menu

Seafood Almondine
Cod and Shrimp

Spicy African Beans in Onion, Tomato and Pomegranate Molasses

2009 Horton Vineyards (VA) The Tower Series, Viognier

The wine was really extremely good with this dinner. Almost as good as an Estencia Pinot Grigio. It went quite well with the spiciness of the beans but did not cover the light cod and almonds. I would have this again. Except this time, I would remove the bean from the pods, although the pods were good. Full of fiber. Cheers and Goot Essen!

Egyptian Fafafel (Ta’amia)

16 Sunday May 2010

Posted by Bob and Robin in Beans, Egyptian Food, Food, Party Time, Recipes, Things To Do

Here is what looks like a good alternative to the hamburger. This is strictly vegetarian, but it has everything in it that I like. I would use the Garbanzo beans instead of the Fava beans. Give it a try. See what you think. Cheers!

Egyptian Falafel (Ta’amia)

http://www.facebook.com/note.php?note_id=122897277730079&id=107993822552848&ref=mf

Ingredients:
1¼ lbs broken Fava or Garbanzo beans
2 large Onions
5 Garlic cloves
Dill, cilantro, parsley, bunch of each
salt and dry coriander to taste
2 chili peppers, optional

Directions:
1). Wash and soak the beans for 12 hours.
2). Chop the greens and the onions.
3). Grind the beans in a food processor. Add the greens, onion and garlic and blend to a medium consistency.
4). Form as patties or in balls and deep fry.
5). Serve with Tahini salad or green salad.
6). You can also add an egg to the mixture or sprinkle sesame seeds on each pattie or ball before frying.

Felcitously & shifa = بالهنا والشفاء = Enjoy your meal = Bon appétit

——————————

That really looks easy to do and it looks like you can add whatever herbs you want. Have fun with this one.
