Osso Buco – Lamb Shanks

OK, so you say you like lamb and you don’t really know what to do with the shanks? (You could use pork for this, too.) Shanks are just a big hunk of fat and bone? Not exactly if your butcher has cut the leg correctly. Look here for a recipe for Lamb Shanks – Osso Buco. This recipe is a little Middle Eastern and Italian; A blend of the two. It does take a while to prepare: 30 minutes plus for the prep and 2-3 hours at a low simmer to cook. But well worth the wait. Serve with a good red wine (Dusted Valley [WA] Cabernet Sauvignon is suggested) and a mix of steamed Green Beans and Yellow Wax Beans. The preparation has a multitude of other things in it including tomatoes, onion, fennel bulb and herbs and spices. Try it and let us know how you like it. Cheers!

Friday Evening– Wine Tasting at 7 PM:

Bring two bottles of wine – same or similar varietals, different vintner or a different year vintage & food bite to pair with and share with all!

6 PM – Happiness Hour (a little surprise for those who make early!) Please “BYODG” bring your own decorated glass!

Two Wines Not To Miss!

And not just because they are from Idaho. And remember, wines are meant to be sampled with food. Robin and I just had a Basil and Herb Chicken (actually from Albertsons and pretty good) with Fresh Orange-Mojo Dipping Sauce for Take-Out Chicken and a Golden Rice Salad. Hopefully, Robin will post the recipes for these.

Actually, this is the wrong label, but the design is the same.

2008 Parma Ridge Vineyards, Snake River Valley Dry Gewurztraminer.

A light, German Style Gewurztraminer. “… Try this Gewurztraminer with pork roast, sauerbraten, turkey and other flavorful dishes.” This went extremely well with our herbal chicken and rice. On the back of the tongue, a hint of citrus fruit, like light orange. This is a wine that will leave you saying, “What was that?”. You can find more about Parma Ridge Vineyards by Clicking Here. At this writing, there are only 50 cases in stock. Order some now – you will not regret it! It’ll be great at Thanksgiving.

The other wine, and this is not the correct label either – it should be a Syringa bush label – is:

2008 Indian Creek Winery, Mountain Syringa.

An awesome wine that is definitely fruit forward – Pear, Citrus. “…Tasty alone or with turkey, many highly spiced fish and meat dishes, breads and cheeses.” A blend of Gewurztraminer (50%), White Riesling (22%) and Chardonnay (22%). Mike and Tammy have done an outstanding job. At last check, there were 5 cases of this left. You can view their Web Site and get more information. Be one of five people and buy a case!!

Both of these wines are outstanding, but for different reasons. You really need some of these in your cellar! Cheers!

Gettin’ It On With Mojo

Fresh Orange-Lime Mojo Dipping Sauce for Take-Out Roast Chicken

Makes about 2 cups and doubles easily. Keeps 4 days in the refrigerator.

1 to 2 large cloves garlic, minced
Juice of 1 large lime
1 cup orange juice
1/4 to 1/2 teaspoon salt
Fresh ground black pepper to taste
1/2 teaspoon ground cumin
6 sprigs parsley (flat-leaf preferred), or 5 large basil leaves, chopped
1/2 cup good tasting extra-virgin olive oil

1. Put the garlic in a medium bowl. Squeeze lime juice over it and let stand 15 minutes while you set the table and pour a glass of wine.
2. Whisk in the remaining ingredients. Taste for seasoning and set out in small bowls for dipping in forkfuls of roast chicken.

Golden Rice Salad

Serves 4 and halves or doubles easily.

6-quart pot with 5 quarts of boiling salted water
1 tablespoon ground turmeric
1-1/2 cups long grain white rice
[optional] 1 sweet yellow or red pepper cut into 1/4-inch dice
5 whole scallions, thin sliced
20 fresh mint leaves, torn (optional)
2 to 3 tablespoons cider [or sherry] vinegar
2-3 tablespoons extra virgin olive oil
Salt and fresh ground pepper to taste

1. Set the pot of salted water to boil (with the turmeric) before starting the mojo. Once it’s boiling, drop in the rice and boil like pasta for 10 minutes. Taste for tenderness. Cook longer if necessary. You want the rice tender, but not mushy.
2. Toss with the remaining ingredients. Season to taste and serve with the chicken.

LYNNE’S TIPS
Take-out roast chicken is my answer to what’s for supper on those too-tired-to-think nights. Many supermarkets put out a fresh batch right about the time people are stopping to grab something on the way home. Check the label and pick the latest one to emerge from the oven. The time should be noted on the label. If possible, go for an organic chicken.

Make a double batch of this recipe and you’ll have mojo for dressing salads and marinating just about anything, including leftover cooked chicken for tomorrow night’s supper salad.

Do use the juice from a fresh orange, not bottled orange juice. It makes a difference.
A dynamite rice salad is the rice as it is cooked in our recipe then dressed with the mojo.
[Optionally add pineapple and/or mandarin orange sections – for more ‘golden’ fruit. ] RY

The chicken we chose was an Albertsons Roast with Basil and Garlic.
The wines that accompanied this meal were the 2008 Parma Ridge Vineyards Gewurtztraminer … a purest’s perfection of spice and fruit, very Alsatian Dry style, an exceptional effort – not many wines accompany oranges in recipes, but this and the 2008 Indian Creek Winery Syringa = ‘Mock Orange’ = Idaho’s State Flower … which has a ‘Syringa bouquet’ and the blend of 60% Gewurtztraminer, 20% Riesling and 20% Chardonnay were really exciting, refreshing and both paired well with the food.

Thank You to Lynne Rosetto Kaspar for the incentive to try this ‘mojo meal’ … we may have to try it with mojitos. Yummmmmo

New Zealand Food and Wine at "The Buzz"

On 12 May, Robin and I and Geno And Debra (we missed you Angie!), had another great tasting at The Buzz in Boise. New Zealand wines were on “tap” tonight and they were pretty good. The Dinner was also excellent – Lamb (if you wanted it) of course! If Lamb was not to your liking, Pork was also offered. Both were delicious. We had Lamb at our table. The wines were also very good. But because of the growing conditions in New Zealand, we started with the Reds and migrated to the Whites.

Geno is studying the tasting sheet to see what will be served.

Debra is checking The Buzz out. I think she is dreaming of a Sunday breakfast here. Hmmmm. Sounds good. Speaking of food, check the New Zealand Dinner out.


We started the Dinner with Tomato, White Bean and Olive Salad along with either a Lamb or Pork Kabob. Both of these went very well with a Kim Crawford Pinot Noir $21.00 (17) and an Oyster Bay Merlot $15.50 (17)

Then we had a Lamb Burger with a Sweet Potato and Pineapple Salad that went very well with the Merlot, but also went well with the Tasman Bay Pinot Gris, $19.00 (20), of which we bought 3 bottles. An awesome Pinot Gris that will go well with just about anything.

And now … Kiwi Cheesecake! I am not a particular fan of cheesecake, but this one, along with the Brancott Sauvignon Blanc $14.00 (19) and a Monkey Bay Sauvignon Blanc, was very, very good! When you think of New Zealand wine, think Sauvignon Blanc and the vintage.
A good selection of foods and a wonderful selection of wines. If you notice the number in parenthesis – (20) – you will know my scoring. 20 being top. The next tasting will be on June 9 and California wines – I hope not all of them – will be featured. Then on June 21, there will be an awesome Special Father’s Day dinner. Most of these tastings are $10.00 per person, but the Father’s Day dinner will be $25.00 per person. This event will be an exceptional evening. Make your reservations early!

Farmer’s Markets and Other Great Information

I have been asked several questions about local Farmers’ Markets, and trying not to make the “Comments” list so big, I will try to answer some of the questions here. (For those who may not know, if you Left Click on any photo, you will get a Full Screen view. Easier to see some of the images.)

Farmer’s Markets –

Robin and my intention this morning was to visit the Nampa Farmer’s Market, the Kuna Farmer’s Market and to deliver the last of the Idaho Wine Competition medals to Hells Canyon Winery. Oh well, two out of 3 isn’t bad. Nampa will have to wait until next week.
Wendy asked, “I had no idea that there were so many markets in the area!! Is there a wide variety of vendors between the four different markets? I am very interested in this information! I know that Koenig is at the downtown Boise market, but we would like to see about getting in on the Caldwell market that is on Wednesdays. Do you have any idea how we go about that, or who we should contact?” There is some variation in vendors between the markets – not all vendors go to all the venues.

Contacting the Kuna Market is easy – the graphic on the left has the information and who to contact. As far as I can tell, there are about 12 Farmer’s Markets within 50 miles of Boise, Boise actually having/sponsoring two. I will list them below.

If you look at the second photo and on the back left of that photo, you will see Buck’s Barnyard. Interesting and an ingenius idea, and green. He takes old and headed for the dump fruit boxes, unuseable fabric and old packing material and makes “raised vegetable boxes” from them and sells the idea – installed, I might say – for $185.00 (I think). Contact them for more information. (I am sorry, but they do not have a webpage.)

Poulet Rouge

Here is a recipe for an easy and good way to make a chicken dish. Try it … You’ll like it.

Poulet Rouge

Source: Bob and Robin Young
Serves: 4

4 med Chicken Breasts, boneless and skinless
¼ c Tarragon, fresh
2 T Thyme, fresh
4 med cloves Garlic, diced
1 – 8oz can Stewed Tomatoes, Italian Style
¼ c Olive Oil
¼ c Sweet White Wine
Salt and Pepper to taste

1. Place all ingredients, except chicken, into an immersion blender container. Blend well.
2. Place chicken in a small skillet and pour the marinade over. Place in refrigerator and cool for 2 hours. Before cooking, bring to room temperature.
3. Simmer over med-low heat until the chicken is cooked – 175ºF internal temperature.
4. Serve on a platter: Spoonful of hot marinade, chicken breast and another spoonful of marinade. Serve with sliced carrots and peas.

Note: You can double this recipe with no problems.

This might be good also over a small bed of rice or linguine. A glass of a sweet, white wine might also go good with it. Give it a try. Cheers!
