A Delightful Visit to Juniper


28June2016_1_Juniper_Inside-BarOn Tuesday, June 28, we visited Juniper, on 8th Street and we were delightfully surprised. It reminded me a lot of the Cloud 9 Nano Brewery and Pub Review. Essentially the same type of floor plan but an extended menu from Cloud 9. Both are very deserving of our 4-Star rating. We will most likely to return to Juniper, as the staff was delightful and the food awesome. There are some other items on the menu that we want to try. Here are some photos from today’s visit. They had a special soup today, Ginger Carrot Soup, and they gave us a sample. Spicy. Candied ginger. It reminded me of a tomato soup. That texture and “after taste”. Good. Cheers!

The Infamous Hotdog!


3April2016_1b_New-CharBroil-Grill_Mod-Smoker-BBQ-Grill_OpenAh yes! That ballpark treat! The fresh grilled hotdog rolling in the sand at the beach … or at the shore. Wherever or however, there is nothing better, IMNSHO, than a grilled hotdog or brat. I have two that I really like. But to be fair, all three of these types of hotdogs are good. Different flavors. Different textures. Different tastes. And the condiments that you might put on any one of these treats, will alter that flavor. Generally in a good direction.

And which one do I like best? It’s a mood thing. Or a beer thing. Which one will go better with a Stella and some fresh made baked beans. Maybe a little potato salad. At any rate, however you enjoy them and with your favorite side, Trader Joe’s came out this week with some really good information on the lowly dog in the article Condimenting The Dog. In the article, to be found in the link listed, regarding the somewhat surprising history of a condiment,
“Condiments, from the Latin condire (“to preserve, pickle, season”), have been a culinary tactic since Ancient times. They have been used both to preserve foods as well as to enhance flavors.
So compelling and powerful, condiment use has been a source of controversy in American cuisine. In the 19th Century, several attempts were made to ban condiments. No condiments? No kidding. Sylvester Graham (of graham cracker fame), published in his 1839 Lectures on the Science of Human Life that the applying condiments, including mustard, ketchup, and cinnamon, should be prohibited because they were “highly exciting and exhausting.” Is it just us, or does hearing this encourage some intense condimenting?! Yes!”

The article lists several kinds of condiment which are easily made and constructed from ingredients found at Trader Joe’s. Just place all ingredients in a bowl and mix thoroughly and Voila! A condiment. For instance, they suggest,

TROPICAL SWEETIE DOG:12 oz Mango Jicama Slaw and 12.5oz Island Salsa —suffuse with tropical sweetness, this dog has a very social personality. If you like it really sweet, pour on the Island Salsa; if you don’t, add salsa sparingly.
CHAAT DOG: 10oz Channa Masala, 10oz Palak Paneer and Diced Yellow Onion—savory Indian chick peas; upon savory Indian spinach and cheese; upon a robust, savory hot dog—this well spiced dog takes chaat (“savory snack”) to new heights!
RODEO DOG: 16oz Chunky Spicy Guacamole Auténtico, 13oz Cowboy Caviar and 16oz Organic White Corn Tortilla Chips — bucking with spicy, Southwestern-style flair, this dog makes you feel like strapping on spurs. Hold on tight!”

There are three suggestions from them. Use your imagination and culinary talents to find these products if you don’t have a Trader Joe’s in your area. Afterall, that’s part of the fun of summertime culinary adventures.

26Feb2016_1_Sushi-Joy_Robin_Right-FacingBreakfast was OK. Robin doesn’t particularly like Baby Swiss. Cheddar is better. But, thanks to Desert Mountain Farms and Ed Wilsey, the 1″ pork chops were super. Huge! Delicious. And we make our own stuffing for these – it could have been better this time, though. Corn was from —- somewhere. Bacon from Twin Falls. Bread from Acme Bakeshop. Eggs from Meadowlark Farms. The salad was from Idaho – greens, onion, tomato. Love this time of year when the produce can be purchased from the Boise Farmers Market every Saturday at 10th and Grove. So here are our meals. All of them very easy to do; No particular recipe. Wing it!

Hat Ranch - Vale CollageChandlers Prime Steaks and Fine Seafood in Boise presented a wine dinner featuring Hat Ranch/Vale Wineries. Great food and wines and we were privileged to be there. And I did find out that Hat Ranch Winery does have a Petit Verdot that is not blended with anything. It is 100%! One of the few and I do like a good Petit Verdot. We did start with a good Hors d’oeuvre of endive stuffed with Roquefort and walnut – which was very good – and a crostini with tapenade. Also served was puff pastry with fromage blanc. whenever possible Chandlers uses all local, Idaho products.
But before we could start this fantastic wine dinner, we sat at the bar and asked the Bar Tender if he had a drink made with elderflower. In fact, he does – tow of them. One somewhat sweet and the other slightly tart. We got one…

Wonderful 40th Birthday Party for Ravenswood Winery


18June2016_8_Ravenswood-BDay-Partytime_SignAnd such a great party it was! 80 people plus attended and we felt quite honored to be included. Robin did help start the winery back in the early to mid 1970’s. From their web page, “On a fall day in 1976, as ravens taunted from tree branches above, Joel Peterson worked doggedly to bring in four tons of grapes before a looming thunderstorm hit. The fruit he crushed that night was used for one of two single-vineyard Sonoma County Zins – the first wines to bear Ravenswood’s signature ring of ravens. The fledgling winery got off to a great start when those wines came in #1 and #2 at a prestigious San Francisco tasting in 1979. With the critical thumbs-up, Joel was able to gather a few wine-loving investors to help get his winery off the ground. He still didn’t have enough money to buy property, so he looked around for more grapes.” Ravenswood Winery, web page.

The wines tonight were all made in Idaho by Clearwater Canyon Cellars, even though some of the grapes are from the state of Washington. For that reason, I am including an AVA map of Washington. You will be able to locate these different grape producing areas. Because the wine was produced in Idaho and in the Lewis-Clark AVA (Idaho’s newest AVA), the wines are considered Idaho wine.

Sakana Japanese Sushi and Steak House

It’s really a great thing when you come across a restaurant, such as Sakana Japanese Sushi and Steak House in Boise, and it severely challenges your benchmark Asian restaurant, Sushi Joy and Shige Japanese Cuisine. Yes. Sakana is that restaurant and it rates, now, as our benchmark with a solid 5-Star sushi/sashimi/Japanese cuisine. It is superb! The Wait Staff is kind and extremely helpful. The sushi chef, Xing, is from China and his talent is awesome. A wide range of Japanese dishes such as Hibachi, Bento Box, sushi and sashimi (which is superb!), tempuira, teriyaki and the list goes on. It is well worth your trip to go there. They are located at 7107 W State Street, Garden City. (208) 853-4993 and they are open Mon – Thursday: 11:00am – 10:00pm, Friday and Saturday: 11am – 11pm, Sunday: 12 noon – 9pm. I had this Sashimi Deluxe, 18 pieces of pure delight. Mackerel (Saba), Octopus (Tako), Salmon (Sake), Albacore Tuna (Shiro Maguro) served with Cucumber, Diakon and Shaved Ginger and Wasabi.

The vehicle really seems to be well designed and can carry a good supply of farm fresh produce to the community and to those who can not make it to the market for some reason or another. IMNSHO, this is a huge community service!
I would be remiss if I did not mention some of the organizations who sponsor and assist in the program and have supplied the vehicle, produce and services – Boise Farmers Market, Idaho Womens Charitable Foundation, City of Boise, St Luke’s Hospital, Eat Smart Idaho, Boise State University and University of Idaho Extension to name a few. Make Your Own Chinese 5 Spice

Really not hard to do. A spice mill will really help in this. Buy an inexpensive coffee grinder and dedicate it to grinding spices. Here is the recipe from Amazing Ribs, of all places. There are many sources for this recipe, but they all seem to be about the same. Some of these spices you should be able to buy local. Enjoy!

 

 

Chinese Five Spice Powder

If you want to add an Asian accent to a dish, there are three ingredients, any one of which will do the job: Hoisin sauce, sesame oil, and five spice powder. Five Spice Powder is a blend of cinnamon, cloves, fennel, star anise, and Szechwan peppercorns. Some recipes also contain ginger, nutmeg, and licorice. Adjust the recipe to suit your needs. If you don’t want to bother making your own, it is available in the spice or Asian section of better super markets. As background for this recipe, please read my article on the Science of Rubs.

Ingredients – Basic Recipe:
1 T Cinnamon Powder
1 T Clove Powder
1 T Fennel Seed Powder
1 T Szechwan Peppercorn Powder
1 T Star Anise Powder

Optional. Some commercial blends can’t count and add black pepper, ginger, nutmeg, and licorice. I usually add 1 teaspoon each of ginger and nutmeg.

Directions:
If you have only whole cloves, fennel seed, Szechwan peppercorns, or star anise, you can grind them in a spice grinder or a mortar and pestle. I use a coffee grinder. Whole seeds grind down to much less volume, so use about 1½ times the quantity before grinding. In other words, if you don’t have fennel seed powder, start with 1½ tablespoons of fennel seeds, and grind them to powder. You might need 2 tablespoons of star anise seeds to make 1 tablespoon of powder. You don’t have to be precise in making this blend.
