Ah yes, another delightful night at Le Café de Paris and the First Thursday Tapas Night. Robin is intently listening to the music. A very different venue … but a very good one. Here is what Matheiu Choux, Owner, said,

Bonjour Mes Amis,
First Thursday is upon us once again. We will be featuring American Tapas, and wine tastings from local winery, Cinder. We will be hosting the signing for the premier book on Idaho wines, by author and photographer, Alan Minskoff, and Paul Hosefros, entitled “Idaho Wine Country.”

And so it was a delightful evening. The restaurant was very full, more so than I have seen it in the past. But then, we arrived there later than usual, around 7:00pm. Maybe it was the American Tapas that attracted so many people; Maybe it was the book signing and the local topic of the Idaho Wine Country; Maybe it was the attraction of having another awesome meal. As Jay Leno would say, “Here, you be the judge.” Along with our dinner, we had an award winning 2008 Cinder Viognier. Here are some photos of what we had. Cheers!!

Grilled Buffalo Rib-Eye

Buffalo Rib-Eye

A while ago, I said that tonight we would have some red meat – Buffalo to be exact. And so we did! To the left, is a photo of –

Grilled Buffalo Rib-Eye with Roasted Herbal Squash

Serves: 2

Ingredients:
2 Buffalo Rib-Eye Steaks
1 t Greek Oregano, fresh and crumbled
2 t German Thyme, fresh
1/4 c Olive Oil
Salt and Pepper to taste

Directions:
Mix the herbs and the olive oil. Blend with a submersible blender. Place the Rib-Eyes in a ziplock bag and pour the marinade over the steaks. Refrigerate for at least 1 hour, turning twice.

Heat the grill to 275 degrees F.
Place the rib-eyes on the grill and cook for 6 minutes on each side for a medium-rare steak. Serve with the roasted vegetables.

Grilled Herbal Squash

Ingredients:
1/4 c Olive Oil
2 t Tarragon, fresh and chopped fine
1 t Greek Oregano, fresh and chopped fine
3 cloves Garlic, diced
Salt and Pepper to taste
1 med Summer squash, cut in half lengthwise and seeds scooped out
1 med Zucchini squash, cut in half lengthwise
2 Cherry Tomatoes, cut in half

Directions:
Blend the olive oil and the herbs in a measuring cup. Place in a shallow dish. Immerse the squash in the herbal mixture and fully coat. Let marinate for 1 hour.

Place on the hot grill with the Rib-Eye steaks, cut surface down. Cook for 6 minutes and turn the squashes over. Fill the scooped out summer squash with 2 of the tomato pieces and some of the herbed olive oil and garlic. Cook for another 6 minutes. Remove from the grill and plate immediately. Enjoy!

Chocolate Hazelnut Toffee Bar

Ingredients:
1 cup of butter room temp
1 cup of brown sugar
1 T vanilla
blend in food processor [or mixer]
add
1 egg yolk
1 cup flour

Directions:
Press the dough into a rectangle shape either in a square baking dish or as I did on parchment paper lined cookie sheet.
Bake 25 min at 325 F until golden edges and slight indentation in center. cool

Ganache Frosting
Melt 10 ounces of bittersweet chocolate in 1/4 c milk – I used a quart glass measuring cup ->2 minutes in microwave.
Stir and pour over cookie bar spreading to cover

Top with 1/2 cup chopped toasted hazelnuts – pressing them into the chocolate.
Cut into 1 inch squares.

In this heat – refrigerate them after cooling

Rosé Gelatin Dessert

Serves: 4

Ingredients:
2 cups Rosé wine
1/4 cup sugar, to taste
1 1-to-2-inch length of cinnamon stick
Zest of 1 orange, with as little pith as you can manage
5 peppercorns
2 envelopes gelatin
2 tablespoons lemon juice
3 white or yellow peaches or nectarines, each sliced into 16 wedges.

Directions:
1. In a nonreactive saucepan, add 1½ cups of the wine, along with the sugar, cinnamon, orange zest and peppercorns. Bring to a boil, then immediately turn off the heat and cover the pan.

2. After 20 minutes, pour the remaining wine into a medium mixing bowl and sprinkle the gelatin over it. Let sit for 3 minutes. Strain the spiced wine into the bowl and stir well for 2 or 3 minutes, until the gelatin is entirely dissolved. Place the bowl inside a larger bowl containing ice water, or put in the refrigerator.

3. When the gelatin is as thick as the white of an egg, 30 to 45 minutes later, put the lemon juice in a wide-bottomed bowl and add the sliced peaches, stirring as you go to coat the peaches with the juice. With a slotted spoon, transfer the peaches to the bowl of gelatin and fold them in gently. Divide the gelatin and peaches into 4 wineglasses, cover each with plastic wrap and refrigerate for 3 or more hours.

So there you have some more recipes to try. These are very good! We had our dinner with a 1979 Anderson Valley Cabernet Sauvignon. (Robin did a super great job with this wine!) Try them and enjoy. Cheers!

Well, this weekend is the Yearly Trek To Silver City and the Friday Night Wine Party!! Supposed to be 100+ here in Boise. We’re off to the mountains. Here is the word from Jerri about the weekend. See you there!

If you have any questions, please give me a call. Remember – it takes about 2 hours to reach Silver City from Boise. Take care driving and arrive safe in Silver! Remember – no gas stations in Silver, so fill your tank before leaving Boise or Nampa. The road is in great shape and it will be cooler in Silver than Boise!

"the Buzz" – Semillon/Grenache Wine Dinner

So, here we go again. Another wonderful wine dinner at the Buzz! The July Wine Club dinner featured Semillion and Grenache and a full dinner. Not really my favorite varietals, but one must learn to enjoy them. Besides, it’s always good to see what happens when you try these wines with food – as all wines are designed to accompany food.
The photo to the left are two of three additional wines. “Additional” wines are usually served before the party begins. So, tonight we had nine wines and a full dinner all for $15 per person! Here are photos of the dinner selections and the wines that accompanied each plate. My ratings are in parenthesis (17) and rated out of 20 possible points. Percent alcohol and prices are also listed.

We started with a Summer Vegetable Pancake with Basil Chive Cream. (The Basil Chive Cream would be awesome with smoked salmon) This was an incredible dish. To accompany the dish, we had a 2009 Falling Star Semillon/Sauvignon Blanc from Argentina. 13%. $10. (17) This was a sharp wine – briar, lemon, earthy with lemon grass.

Jerked Chicken Kabobs with Water Chestnut Appetizers and Mango Cucumber Salad. This was so delicious and went very well with a 2008 L’Ecole Semillon. Washington state. 14.2%. $13. (18). This wine accompanied the Jerk Chicken and the spiciness of the chicken very well. It enhanced the Mango Cucumber Salad and did not overpower it. The cucumber went very well with the wine. The wine had hints of cinnamon and citrus with the water chestnut.

Turkey Lettuce Tacos. Wow! Another delightful plate. 2008 Tapena Grenache 13%. $11. (18). This was a surprise. Pepper and chocolate. Well balanced with spices. Great with the different taco.

Andalusian Gazpacho. What a wonderful cold soup. Great on a hot summer day. It went extremely well with a 2007 Las Rocas Garnacha. 13%. $13. (19). My favorite wine of the evening. Cherry overtones. Old World style. Went very well with the soup and balanced the spices that were present in the gazpacho.

Cucumber Tomato Quinoa Salad and Fennel Pork Burgers with Grape Relish. You know, Cristi and Tom, you out did yourselves here!! The Fennel Pork Burger with Grape Relish should be on your Bistro menu.

Frozen Chocolate Cheesecake Squares. Anything with chocolate has to be Yum-O! This was no exception. And the wine? A Bitch Bubbly Grenache. $13. (17) Actually, the red pie cherry of the wine went well with the cheesecake.

"the Buzz" Bistro Opens

On July 5, 2010 the Buzz started their new menu and style. Monday through Saturday after 4:00pm they will be serving Bistro Style dinners. Monday – Thursday: 4pm – 9pm; Friday and Saturday: 4pm – 10pm. Closed Sunday. Their menu is displayed below. Along with the bistro, they are also serving a wide variety of affordable wines. Here are some photos of the first night. Cheers!

Here is the menu for the bistro. (Left Click to see a larger picture) You can see that the prices are great and there is a wide variety of choices. Robin and I spent $32 which also included a very good $12 bottle of Rosé.

Robin is enjoying the relaxing atmosphere of the Buzz. On the weekends (Friday and Saturday), they usually have live music from 7 – 9.

Cristi suggested this fine bottle of French Rosé. She was right. The wine went very well with the food selections we made. Light and fruity and not expensive.

Crab Nachos. A delightful change from your standard nachos. These come with tortilla chips topped with crab, blend of cheeses and black olives. Big enough for two!

Flat Iron Steak Salad with Thai Dressing. I really liked this. (Robin and I shared each others selections) The steak was done just perfect – slightly pink as you can see. This is served with chopped romaine, red onion, cucumber and tomato tossed in a Thai dressing. This is an excellent salad.

Tuna Salad with Fennel. Again, not your everyday style of tuna salad. The fennel gives it an extra boost. Served on romaine leaves and the tuna has been blended with fennel and cucumber and seasoned with tarragon. Wonderful!

Unusual Lemon Meringue Pie. Yes … yes … yes! The pie was made with puff pastry. Cristi – You have a winner here!

Fourth of July and Bistro At The Buzz!

Yup! A Fourth of July Pot Luck at the Buzz! Then on 5 July, starts their Bistro Menu. We will probably go to the Opening Night. Fireworks for sure!

Oh yes! Smoked Salmon and Fresh Garden Vegetable Plate. Just one of the many entrees that were brought for the potluck dinner. Such fun and originality. Yum-O!

And how about Black-Bottom Cupcakes that Robin made and adapted!

Black-Bottom Cupcakes
The Great Book of Chocolate,
David Lebovitz

Yield: 12 full-size or approximately 30 mini cupcakes

For the filling:
Optional: 6 fresh Dark Sweet Cherries, pitted and cut in half
8 ounces cream cheese, regular or reduced fat, at room temperature
1/3 cup granulated sugar
1 large egg, at room temperature
2 ounces bittersweet or semisweet chocolate, coarsely chopped
For the cupcakes:
1 1/2 cups all-purpose flour
1 cup firmly packed light brown sugar
5 tablespoons natural unsweetened cocoa powder (not Dutch-process)
1 teaspoon baking soda
1/4 teaspoon salt
1 cup water
1/3 cup unflavored vegetable oil
1 tablespoon white or cider vinegar
1 teaspoon vanilla extract

Make the filling: Beat together the cream cheese, granulated sugar, and egg until smooth. Stir in the chopped chocolate pieces. Set aside.

Make the cupcakes:
1. Adjust the rack to the center of the oven and preheat to 350°F (175°C). Butter a 12-cup muffin tin, or line the tin with paper muffin cups.
2. In a medium bowl sift together the flour, brown sugar, cocoa powder, baking soda, and salt. In a separate bowl, mix together the water, oil, vinegar, and vanilla.
3. Make a well in the center of the dry ingredients and stir in the wet ingredients, stirring until just smooth. Stir any longer and you will over mix the batter and end up with less-than-tender cupcakes.
4. Divide the batter among the muffin cups. Option – place 1/2 Cherry in center. Spoon a few tablespoons* of the filling into the center of each cupcake, dividing the filling evenly. This will fill the cups almost completely,** which is fine.
5. Bake for 25 minutes, or until the tops are slightly golden brown and the cupcakes feel springy when gently pressed. These moist treats will keep well unrefrigerated for 2 to 3 days if stored in an airtight container.

Two notes:* If you choose to go mini for these, keep the filling at a tablespoon or less, lest you run out, as, ahem, someone else may have.
** Though I’ve only made this recipe once, and therefore don’t think you should take my input as absolute authority, I’ve got to advise against actually letting these guys fill up. Not an issue if you’re going full-size, but if you go mini, aim for 90 percent full.

And of course, there is always one Special Delight at every party. Here we have ours. On the right and trying not to look at the camera, is Bailey. A delightful young lady that loves to smile and tease, especially her brother.

Let’s not forget that tonight is Tapas Night at Le Café De Paris in Boise. The menu looks like it will be interesting and good. The serving are large enough to satisfy even the hungriest of people. Robin’s Quinoa Salad

Don’t wrinkle up your nose! Think of it like a macaroni salad. This is really an excellent salad. Enjoy!!

Robin’s Quinoa Salad

Source: Robin Young
Serves: 12
Tip: This salad can be made up to 2 days in advance. Cover and refrigerate. Serve chilled.

Ingredients:
1 c Quinoa
2 c Water
½ c Orange Juice, fresh
¼ c Cilantro
¼ c Parsley
1 c Celery, chopped
1 t Turmeric
1 t Cumin, ground
4 T Rice Vinegar
1 T Toasted Sesame Oil
1 T Ginger, fresh and minced
Sea Salt to taste
Pinch Red Pepper Flakes
1 Mango, diced
1 Jalapeno, seeds removed and diced
2 cans Black Beans, drained
1 Sweet Red Pepper, roasted and diced
¼ c Red Onion, diced
¼ c Sweet Yellow Onion, diced
½ pint Grape Tomatoes, cut lengthwise

Directions:
1). Toast the quinoa in a small dry saucepan over medium heat, stirring often, until it crackles and becomes aromatic, 4 to 6 minutes. Transfer to a fine sieve and rinse thoroughly. Return quinoa to pan and add water. Bring to a simmer; reduce heat to maintain a simmer. Cover and cook until the quinoa is tender and the liquid has been absorbed, 15 to 20 minutes.

2). Whisk the orange juice, vinegar, oil, ginger, salt and pepper flakes in a medium bowl. Add mango, jalapeno, grape tomatoes, celery, cilantro, parsley, roasted red pepper, beans and onions. Add the spices. Toss to coat.
