Chicken Kiev for Rosh Hashanah

Ready for the oven.

This was really a good dinner. Easy to make and only takes about45 minutes including prep work. Give it a try.

Chicken Kiev
Spinach Salad
fresh tomato, carrot strips, basil, fresh lemon cucumbers, lite lime dressing

Here is the recipe. Enjoy!

Chicken Kiev
(Rosh Hashanah)

Source: Robin Young
Serves: 2

Ingredients:
2 boneless and skinless Chicken Breasts
1 Lemon

Herb Butter:
½ c unsalted Butter at room temp
1 T fresh Chives, chopped
1 lg clove Garlic
¼ t Sea Salt
¼ t fresh ground Pepper

Chicken Dredge:
Toothpicks
Matzoh flour, or panko or breadcrumbs
1 lg Egg
1 T Water
1 T fresh Lemon Thyme
¼ t Sea Salt
¼ fresh ground Pepper
Olive Oil

Directions:
Pre heat oven to 425°F

Herb Butter: Can be made ahead
Combine the soft butter with the chives, garlic, salt and pepper. Cover with clear wrap and roll into a log. Place in refrigerator for more than 30 minutes to stiffen.

Chicken:
Pour ¼ cup olive oil into a baking dish to coat.

Pound the chicken breast to ¼ inch. Place several small pats of butter (3) in the center of the pounded breast. Squeeze fresh lemon juice on the pounded breasts. Roll and stabilize with the toothpicks.

Coat the chicken with flour. Then dip into the beaten egg that has 1 T of water added.

Combine the lemon thyme, salt and pepper to the Matzoh. Mix to combine. Dip the chicken into the Matzoh and coat. Place seam side up into the baking dish.

Bake at 425°F for 15 minutes. Reduce the heat to 375°F for 10 minutes. Baste several times with the drippings.

Two awesome meals this weekend. This one is one Robin made in the motor home’s microwave while we were at the Snake River RV Resort in Homedale, Idaho.

Fresh Made Popovers filled with Fresh Egg Salad

This was simply delicious!

And then tonight we had

Grilled Pork Ribs
Chinese Black Rice
Fresh Made Sweet and Sour Sauce

This was another great meal. I have never had Chinese Black Rice, but it is delicious! Fruity. Maybe a little sweet. Great with the pork. We had grilled three racks of these ribs and they were all super. Cheers!

Dinner at Vicino’s

Robin and I decided to go out for dinner last night. We went to Cafe Vicino for a delicious treat. We have not been there for a while, but they still maintain their 5-Star rating. It was good to see Carrie again, one of our favorite Wait Persons and to meet Sarah. Great job Ladies! Look at what we had. Cheers!

hazelnut short dough with warm chocolate molten center topped with whipped cream

Key Lime Tart
Key Lime curd in a short dough crust topped with meringue served with strawberry sauce

The Chocolate Hazelnut Tart was good!

So was the Key Lime Tart!

Pallet Garden Tomatoes!

We have been using the herbs from our pallet garden for sometime now. But as you can see, we have some tomatoes, Roma’s, ripening in the garden. See the wine bottles? Fill them with water, turn them to empty out, and they will give the garden a trickle watering. It lasts for about 24 hours, unless it is extremely hot.

We also made a trip to Goldy’s Corner across the street from City Hall and joined with Goldy’s Restaurant. Goldy’s Corner is a great place for a fine cup of coffee or tea. Some sandwiches and a limited dinner menu Wednesday through Saturday from 6:00pm to 9:00pm. Reasonable prices, large sized helpings and a friendly atmosphere. You can take your laptop, too. WIFI is available. Try them. You’ll like them.

Fourth of July Celebration!

A great time was had at Mac and Marnie’s last night to watch fireworks and eat! Thanks to Mac, Marnie, Sophia, Chris, Maddy, Margaret and Robin for making it a good evening. This beautiful sunset was just before the fireworks show in the valley. We had good seats and none of the smoke.
Robin and I bought 14 Dungeness crabs at about 1.75 lbs each. 7 of us ate them. And at the end of the evening, we could take some home. Beer and wine accompanied the crabs quite well. Margaret brought her delicious potato salad, and Marnie and Mac bought corn, which Mac grilled. Sophia made a raspberry cake for dessert. Here are some of the Dungeness crabs that I picked this morning. We ended up with about 2.25 pounds of the crab meat from 2.5 crabs. Stewing down the shells for stock; froze 3 packages of the picked meat and have one package ready for ……………….

Here is one of the crabs I picked. They are a pretty good size crab and have that awesome  Smell of the Sea. We get them fresh from our local fish store here in Boise, Reel Foods. They have some fabulous seafood. Fresh and delicious!

Here you can see the size of these crabs. Almost 12 inches across!

I hope the summer finds you well! Le Cafe de Paris will be hosting many wonderful events in the coming months, everything you need to know about our upcoming events can be found in the attached newsletter!

With June comes our first Farm and Wine Night on June 21st. In order to display the amazing and variety of produce coming out of local farms, we will be showcasing several farms for this dinner, as well as hosting wine tastings from Wood River Cellars. The menu is below, come on out and see what makes Idaho great!

Robin found this bone-in pork chop recipe from the National Pork Board. I like pork. Anyway you prepare it. But this is by far some of the best I have ever eaten. It is delicious!! Here is the recipe for Bone In Pork Chops with Hawaiian Marinade. The recipe serves 4. She only likes the bone in pork. Bone in anything, makes for a more flavorful meal. Our meal is pictured here. This recipe is also in the Master Recipe List.

Dockside’s Peanut Butter Pie

This is an awesome peanut butter pie and so very easy to make. No cooking. Just mix it together, place in the freezer and wait – if you can – until it sets up. This is the original recipe from the Dockside Yacht Club in South Chesapeake City, Maryland. You can either go full screen and save the graphic below, or see the recipe by Clicking Here. There is also a copy in the Master Recipe List on this blog. (See above) The graphics displayed here are the original copies of the recipe handed out by the Dockside Yacht Club. I don’t know if you can still get them. The recipe as scanned here is at least 30 years old. I scanned these from the original. Enjoy!
