Lunch, or dinner, at Le Café de Paris is always good! But when you can have lunch with some very special people, it is even better. 9 August was just such a day when Bonnie Nees and her daughters, Kelsey and Shianne, all joined us. We loved this — used a whole bag of baby spinach, and a frozen whole wheat pie shell (without lard, transfats, etc.). Will definitely make agian!

I double or triple the recipe and freeze in portions for a quick meal with a grilled cheese or by itself. I have made it sometimes with canned and fresh combined. always tastes great.

Hint for home oven baking I line the bottom oven rack with unglazed Quarry Tiles and set the rack on the lowest shelf setting. I use a plant mister in place of steam. Preheat oven 2 hours prior to baking, 5 minutes before baking open oven door and mist oven for 6 seconds.
