This Seafood Almondine actually was quite good. And besides, my Doctor would be pleased that I am eating so well – I did loose 21 pounds since my last appointment with him this past Spring – while he is eating his Rib-Eye and French Fries. It’s not that we eat less – we eat smarter! Heres what we had.

Spicy African Beans in Onion, Tomato and Pomegranate Molasses

2009 Horton Vineyards (VA) The Tower Series, Viognier

The wine was really extremely good with this dinner. Almost as good as an Estencia Pinot Grigio. It went quite well with the spiciness of the beans but did not cover the light cod and almonds. I would have this again. Except this time, I would remove the bean from the pods, although the pods were good. Full of fiber. Cheers and Goot Essen!

Baked Cod with Squash Tapenade

Just another good dinner. We’ve got all these tomatoes and squash to use. The Elbow Noodles with Browned Butter, are just that. Easy to do. The Baked Cod is rubbed in olive oil and seas salt then baked at 350 degrees F. Again, easy to do and pretty straight forward. The Squash Tapenade is a little more complicated, bu not much. Caramelized Onion, diced Summer Squash, chopped Fresh Roma Tomato, Capers and Dry Roasted Pine Nuts.
Here’s what to do. Dry roast the pine nuts and set aside. Caramelize the onion slowly over medium heat. Add the squash and cook over medium heat. Add the tomatoes and cook until broken down to a heavy sauce.
While the tomatoes are cooking, bake the cod at 350 degrees F until slightly flaky.
Back to the tomatoes. Add the capers and pine nuts. Stir to mix and serve as pictured above. Enjoy!

Potato Encrusted Fish

I do like my breaded and sauteed seafood. So, here is a change that Robin made tonight. Really easy to do.
Potato Encrusted Halibut and Talapia
2 Filets of Talipia; 1 Filet Halibut.

Shred 1 potato. Mix with about 2 T Rosemary, fresh. Press potato mixture into fish.

Place equal amounts of butter and olive oil in a skillet over medium heat.
Gently place filets in the skillet being careful not to loose any of the potato shreds. Cook until potato turns golden brown.

Using 2 spatulas, turn fish over and cook until browned.
Place 1/2 piece of the Halibut on a plate along with 1 filet of Talipia. Serve with Fresh Garden Relish and a slice of fresh cantelope.

This was an awesomely wonderful dinner. This is a great alternative to the popular breaded and fried fish. The shredded potato adds another dimention. And as we say in dance class, “Your turn!” Cheers!

Poached Cod

Actually, this Poached Cod (right side of plate)is pretty easy to do. The liquid to poach the fish is mango juice – we used Mango Snapple. Near the end of the poach, 4 minutes on each side – I cut up some mango slices and put it into the poaching solution. Plate with some of the mango and some fresh Pico de Gallo – Fresh red tomatoes and maybe some Green Zebra tomatoes, fresh jalapeno pepper, fresh onion, Mexican oregano and cumin. Serve with some steamed Kale with Onion, Baby Turnip and Garlic, left side of the plate. That’s the whole dinner. You don’t need anything else except maybe a good Idaho 2008 Indian Creek Winery Pinot Noir and now you have one super dinner. Have a good time with this one and serve it to someone special. Cheers!

Mixed-Up Grilled Dinner

Actually, the dinner for 03 August was supposed to be grilled chicken. But then …. a Senior moment! The chicken is in marinating (Olive Oil, garlic, chives, sage and thyme) in fresh herbs from the garden. And then …. And then …. The Senior Moment!! The grill is started; Our tickets are purchased for the BBQ Salmon Feed sponsored by the Meridian Firefighters on Friday (See the post on this blog); I need to get the Salmon out and marinate it. WHAT? It’s supposed to be chicken tonight, because you’re going to have salmon – a lot of salmon – Friday night. I tell Robin that the potatoes are on grilling. After 8 minutes I put the salmon on and start the chard – fresh from our grocery pick-up this afternoon. And then …. I realize, with some dismay, that the chicken is marinating and the salmon is on the grill. I told Robin that there was a slight change in dinner plans and that the chicken had been replaced by salmon. She gave me one of those disbelieving Robin Looks and a Mona Lisa smile, as if to say, “Dementia!!” So, instead of a delicious grilled chicken – that will come tonight – our menu looked like this. Sautéed Fresh Chard in Garlic and Soy Vay, Veri Veri Teriyaki

2009 Indian Creek Viognier
(Along with their 1988 Pinot Noir and their Petite Verdot, this wine ranks right up there with Indian Creek’s best ever! Full of fresh pear and vanilla. Buy a case or two!)

Actually, it was good! So tonight, with the Marinated Chicken, we will have Grilled Squash and something else. And I just remembered – We, notice the plurality, missed a Board meeting last night. Oops! Cheers!

Here is a wonderful summer dinner. Breaded and Sauteed Talapia, Braised Fresh Garden Peas, Braised Marinated Tofu, Potato Salad and Fresh Steamed Jasmine Rice. Serve that with one of the most awesome viognier’s I have ever had – 2008 Indian Creek Viognier.

Orange Roughy and Spanish Pasta

The other night we wanted some seafood for dinner. So we made up some Orange Roughy. A very mild white fish that can be totally flavor-covered if one is not careful. If you poach it, be careful. This was poached and then the tomato and herbs were added for 2 minutes. Long enough. Then, add some pasta to the tomato blend and let it heat through. The tomato sauce has 1 can Fire Roasted Tomatoes, fresh Corn (not from our garden), Greek Oregano, Chive, Shallot, light Garlic, Coriander and Parsley in it. (All herbs from our garden) The photo shows pretty well what you end up with. Don’t ask for the recipe …. there isn’t one. It’s called Cooking By Taste. I really like the pasta done this way. Almost like a hot salsa. Cheers!

Two Restaurants Reviewed

Back around the first of May, I received an email from Danielle Dussult, Account Associate at MS&L Worldwide for Bonefish Grill, a marketing firm, asking us to review the Bonefish Grill and another comparable restaurant. For doing this, she sent us two $25 gift certificates, one for the Bonefish Grill and the other for Red Lobster. She also sent a nice fish spatula. We thank her for these items. Look at the review for Bonefish Grill and Red Lobster that will correspond with these photos. I will start with the Bonefish Grill photos.

Here is the Bang Bang Shrimp appetizer. This is really a good appetizer.

I had the Diablo Shrimp Fettuccine. This was very good, but I think it had too much sauce on it and it was a little spicy. I think it would have been better with less sauce.

Robin had the Long Fin Tilapia. The tilapia tastes like a fresh water fish – Gout de Terrior. And the shrimp tasted like the Song of the Sea – Chansons del Mare. That is very difficult to do in Boise.

We took pour daughter and her friend with us. He had the Fish and Chips and he said they were very good. She had the Bang Bang Shrimp Tacos and said they were spicy hot.

We shared a Key Lime Pie for dessert. I did not get the intense lime flavor, nor did Robin.

The Crème Brûlée was really very good. Smooth and creamy as it should be. The caramelized sugar was good.

Here are the photos from the Red Lobster.

For an appetizer, Robin and I had the Wood Grilled Shrimp on Brochette. A good appetizer.

I had a combination platter called Seaside Shrimp Trio. It had Walt’s Favorite Shrimp, which was a little too salty, Shrimp Scampi, good, and Shrimp Linguini Alfredo, very rich. Not as good as the Bonefish Grill, Diablo Shrimp Fetticine.

Robin had the Chef’s Grilled Tilapia. She said that the flavor of the tilapia was hidden by the soy sauce. It was not as good as the Bonefish Grill.

The Apple Crisp had very little apple in it and the cake base was overwhelming.

The Key Lime Pie was more like a NY Cheese cake. It was heavy and not light.

So there you have our opinion. The rankings?

Red Lobster – 2 1/2 Stars
Bonefish Grill – 3 1/2 Stars

Our reviews are based on the following statement and have been for many years now.

We will endeavor to critique these restaurants on (1) Ambiance, (2) Food Presentation, (3) Food Quality, (4) Service and (5) Cost. We will rate these places from one (1) to five (5) stars. A 1-Star restaurant deserves the comment, “That’s good enough for this year” and a 5-Star restaurant is superb and deserves a note home to Mom. There is nothing wrong with a 3-Star restaurant – We would take friends and relatives to a 3-Star restaurant and we will return to a 3-Star restaurant.

There was one other contributing factor to the Red Lobster loosing this contest: We had to ask for table settings and napkins. To me, this is a huge mistake and should never happen at any restaurant. But then too, the food was just OK. You can see all of Our Reviews by following the link.

Robin made some fresh lox the other day out of some fresh salmon. So for lunch today, we had a Cream Cheese and Lox with Onion, Capers and Fresh Bibb Lettuce on a Toasted Bun. (Thanks Donna, for the lettuce sets!) Delish!! There is a place in downtown Boise where you can get this for $6.95 and it is called a Manhattan. Their’s is good …. But this is better. It’s fresher, I think. Anyway, it was good!
